Basic Microwave Risotto
Wow, easy and good. Only changes-sauteed onions and garlic first, and added can of mushrooms, with juice, and enough wine to make 3/4 C liquid, put in about 1/4 c cream when cooking was finished. Came out great!

Chicken Piccata II
I made this today for my family, 3 out of four of us liked it alot. So that means I will make it again. I refrigerated the coated chicken 30 minutes, and in the last 5 minutes of cooking, I added 1 Tbs drained capers. Yummy!

Penne Pasta with Spinach and Bacon
This was very good, easy, and the feta on top made it wonderful. Both kids asked for seconds. I used precooked bacon, no olive oil, and fried it up just long enough to grease the pan, then added garlic, for one minute, then tomatoes.
