Pumpkin Bread IV
Everyone in the family (and preschool class) loved this recipe. I thought 4 C of sugar was going to be too much but the bread was not too sweet, just perfect.The only changes I made were to substitute applesause for the oil and use the entire 29 oz. can of pumpkin. From a single batch I made one large loaf, one mini-loaf, one dozen regular muffins, and two dozen mini-muffins. The mini-muffins took about 18 mins, the regular muffins about 30 mins, the mini-loaf about 40 mins, and the large loaf about 60 mins.
