Shrimp Stir-Fry

Easy and delicious! I used fresh garlic and ginger, I think that works better in general that powdered stuff. I mixed a few fresh veggies with frozen and it turned out wonderfully!

Rosemary Braised Lamb Shanks

This recipe was surprisingly easy and the results were fantastic (see uploaded photo). To thicken the sauce and add depth, I blended half of the vegetables and garlic, then added that mixture to the pot first. After the blended veggies browned up, I added the rest of the dices vegetables and followed the recipe as written. The sauce was velvety and bold in flavor. The next day, we shredded up the leftover lamb and make a ragout with the sauce over fettuccine. This will be made again many times in my house! One more tip: top the lamb with a simple gremolatta (minced garlic, parsley, lemon zest) to amp up flavor and finish off the dish like a pro!

Chocolate Chip Banana Muffins

Loved this recipe - so delicious and simple to make! I didn't have any yogurt on hand, so instead I added one small jar of banana-pear baby food and 1/4 c of milk. I also added 1/4 tsp more salt than the recipe called for and a little less oil. Baby food might sound weird, but I use it in my baking often to add moisture and flavor while scaling back on oil and butter.

Beth's Spicy Oatmeal Raisin Cookies

These were incredible! I followed the recipe exactly, except I added chocolate chips in addition to raisins. We loved these very much, I'll be making them again for sure!

Roquefort Pear Salad

this was really delicious and light. I used mixed spring greens rather than lettuce, and lightly poached half the pears in a vanilla infused simple syrup. Really nice compliment to a light meal.

Spinach Lasagna III

Pretty good lasagna and easy to make. Really important to drain any liquid that expels out of the spinach before adding it to the lasagna.

Creme Brulee II

So simple yet decadent and impressive! Loved this recipe, will make it again for sure. I did the original vanilla brulee, then I also made a lemon-ginger brulee by throwing in lemon peel and a peice of ginger when boiling the cream and an almond version where I simply substituted the vanilla for almond extract. Get creative!

Cheesecake Supreme

Absolutely delicious! I only needed 4 packages of cream cheese, not 5 and I still had batter left over. I also topped the cheesecake with sliced strawberries sauteed with a little brown sugar. So easy and really impressive. Thanks for sharing this!

Pumpkin Cheesecake I

I think more pumpkin could be added here, as the pumpkin flavor was very very subtle. Good, creamy texture though, everyone loved it. Also, I used canned pumpkin pie filling which includes all the spices so it was super easy!

Mocha Pudding Cake

bloody awful. came out tasting like a dense unsweetened chocolate bread. there was no gooey center even though i baked it for 25 mins instead of the suggested 30. also i put in more sugar than it says but it was not sweet. bloody awful i say!
