Easy Granola Bars

These work great! I read the reviews and used greased parchment paper in a jellyroll pan. I cut them as soon as they came out and covered with foil, flipped them over on a cooling rack right away. I have made them with many different ingredients and they're always great! Just keep to about 3 cups oatmeal and about 3 cups add-ins. This would be a good recipe for those who have nut allergies with coconut, chocolate and dried fruit!

Strawberry Jam

My husband said, "This is the best strawberry jam I have ever tasted." It did not burn because I used a Pampered Chef pan. I used only 3 cups of sugar and it set well. Amazing!

Linzer Tarts

Warning-- This dough is very fragile. Since little pieces keep breaking and I have a tendency to "hide" the little broken pieces in my mouth, next time I'll try a different recipe. It's not that it is too much work, it's just really tricky.

Budget-Wise Chicken Pie

I shredded the vegetables with a food processor, including some onion instead of the onion powder. I also added about a cup of cheese and additional chicken broth. Shredding that way is faster than chopping and cooking them is a lot faster too. In addition my kids found the shredded veggies more palatable.

Flourless Chocolate Cake I

My mother-in-law is 70 and gluten intolerant. When I presented this cake on her birthday with raspberry sauce she said she plans to live a lot more years so she can keep enjoying this cake! I doubled the recipe and used Cherry Marnier instead of water. Also I had dark chocolate Ghirardelli chocolate chips for the chocolate. I decorated the cake with cherries and whipped cream.

Ice Cream Cake

I used 9 inch rounds with a slice from a bucket of icecream. They fit very well and it looked just like a giant ice cream sandwich! Then I frosted the cake using some of the remaining icecream, thanks to the first reviewer's great tip. This was for a boys birthday party so I decorated with swirls of magic shell and let all the boys squirt piles of blue frosting on top! One of the moms thought the cake looked professional, which is tribute to how easy, fun and fabulous this recipe is. (PS--I also substituted Ghidelli brownie mix for chocolate cake mix).

Cookie Balls

These should be renamed "Cookies and Cream Truffles" Do definately use the food processor: Throw all the sandwich cookies in the processor, puree, then throw in the softened cream cheese, let it go until is completely mixed. Then refridgerate the dough! You can make perfect balls in you do this. I roll the balls, place them on wax paper on a tray in the freezer while I roll more. Then I dip the chilled balls. It's not very speedy but they look nicer.

When you combine the wet and dry ingredients, DO NOT "beat until smooth". What this wonderful recipe means to say is "gently fold together". This will yield fabulous, moist, delicious muffins.

Blueberry Sauce

The almond flavor enhances the blueberry flavor--amazing! I like about a tablespoon less corn starch. I have also made this recipe with lemonade instead of orange juice.

Easy Apple Cinnamon Muffins

This recipe is so popular at my husband's monthly brunches at work that he asks me to make it every time. He says everyone loves these muffins because they are ABSOLUTELY DELICIOUS. I'm not entirely happy about that because there is actually nothing particularily easy about this recipe. I have no idea why they have the name easy. Easier than what? How could it be harder? Having made them several times I have learned how they can be made with less effort using a food processor. After I mix the dry ingrediants I put the topping ingredients in the bowl of the food processor and pulse to get crumbs. Then I use the food processor to chop the apples up. I have an apple corer from pampered chef (not that Apple Corer Peeler Slicer which would really help). Then I just cut the peel off of each section of apple. Pulsing the apple slices makes nice little pieces of apple. I also add a little lemon juice to the apples. I also put cream instead of milk since I want the muffins to be delicious and they're for other people. ;)

Choco Peanut Butter Cookies

I really like this combination oatmeal cookie and peanut butter cookie. That said I didn't have time or enough chocolate chips to follow all the instructions. I converted this to a drop cookie by omitting the water and only using 2 cups of oatmeal. Instead of adding more peanut butter, I added a half teaspoon of salt. I needed to be as speedy as possible today so I just missed the chocolate chips in. Yum! The cookies are still have plenty of oatmeal but they may be a little cakey the way I made them. I like the because they make such a healthy after school snack with milk.

Pepper Crusted Tenderloin of Beef

I used NY strip steak because it's substantially cheaper and still good. We made the rub as directed. My husband grilled it, first searing them and then cooking a while on the upper rack above a low flame. Excellent! I don't like beef much but these tasted fantastic.

Fresh Asparagus Soup

I used a very flavorful beef broth because that was what I had. I did overpower the asparagus. I used twice the onions and swiss cheese so it wasn't as good as it would have been, had I followed directions!
