Mini Meatloaves

Yum! I followed exactly but then added some onion soup mix (just enough to season -maybe 1/5 a pkt?) to half the meat mixture to see which we liked better - it was close but the onion side won! With that, it is 5 stars. Will definitely make again.

Chewy Peanut Butter Crisps

delicious cookies, and great when you don't have many ingredients on hand but are dying for dessert (like me last night!). I followed recipe to a tee - cooked on nonstick calphalon cookie sheets, and they turned out PERFECT. the first batch i cooked about 14 mins, and the 2nd batch about 17 and the 2nd batch was better b/c they didn't fall apart when you picked them up. made these last night for hubby and his friend and somehow there were 4 left over (out of the 17 it made) and they were AMAZING today. 10x better than when they were fresh out of the oven. if you don't have choc chips, don't let that stop you - some of mine didn't have chips in them and they were still delicious. will definitely make again, especially knowing i can make them ahead of time and they'll still be delicious.

Mashed Potato Casserole

oh my gosh. SO GOOD. i doubled the recipe, and here's exactly what i used: 2 c milk, 4 eggs, 8 ozs french onion dip, 8 ozs white cheddar bacon dip, 8 ozs lite cream cheese, 8 ozs lite sour cream, only 1 1/3 sticks butter (instead of 2 whole sticks), 4 c water, 6 c flakes, 2 ozs bacon bits, 2 tsp salt. i put it in a 3 qt dish & was concerned it might puff up a lot and spill over, so i put a little in a bowl & microwaved it to see if it'd puff up - it didn't puff up. of course i tried it, and my husband & a friend of ours, and we all thought it was PERFECTION. thanks so much for the recipe, m. ellen! UPDATE: made again with light butter & fat free onion dip (and had to add bacon bits!) and it was still delicious. not as great a texture as the original way, but still REALLY good and will definitely make it again this way.

Greek Penne and Chicken

flippin amazing. made a few changes: omitted tomatoes, omitted chicken, used 2x as much feta, added fat free half and half to skillet at end of cooking time to make more of a sauce, and then once i had it in the bowls added chopped fresh baby spinach. it was so incredible & fresh tasting. thank you so much for the recipe! we can't wait to make it again!!

Chicken, Rice, and Green Bean Casserole

i've made this for years but make a few changes: shred the chicken instead of "chunk" it, omit oil (not at all needed), use light sour cream instead of mayo (to make healthier, altho the mayo tastes great too!), use low sodium soup, use low sodium chicken broth instead of water (low sodium b/c uncle ben's wild rice seasoning packet is so salty). and then when it's finished, crumble fried onion rings on top, or cheese, or both! and broil til brown it really is a delicious recipe, and coming from someone who can't stand canned green beans, that's saying a lot.

Orange Cream Fruit Salad

delicious!! i let the fruit drain in the fridge in a strainer over a bowl for about an hour or two before making. such a refreshing flavor! gets better & better with each day, too.

Grill Master Chicken Wings

used boneless chik breasts & followed recipe to a tee (except a little more soy & little less butter in sauce part) and it is SO GOOD!!! i patted the chicken dry before grilling & i feel like that made some kind of big difference in the way ti cooked. anyway - definitely great & will make again for sure!

White Chocolate Raspberry Cheesecake

i didn't make this but i did eat it! a friend of mine made it for her boyfriend and was gracious enough to save a piece for me. it was the best cheesecake i've ever had!! i mean, totally OUTTA SIGHT!!! i know she used chocolate teddy grahams for the crust, and lined the pan w/alum foil, and didn't open the oven at all while cooking, and had no cracks. whatever she did, i can't wait for her to do it again and make another one! oh, and i know she used 1/3 less fat cream cheese, too - that's a little consolation in the guilt factor :) MAKE THIS!!! **oh, i just saw she reviewed it herself & tells what she did: username is charlie chan** :)

Cake Mix Cookies VIII

definitely use an ungreased cookie sheet - not a silpat or anything like that or the cookie won't cook. i used a silpat with my 1st batch & they were not good b/c they never cooked, even after much longer in the oven. used an ungreased sheet w/my 2nd batch, and they were perfect! delicious! i used devil's food cake mix w semi sweet chips & craisins. YUM. i'm now baking spice cake w raisins and am sure they'll be great too! need to bake mine 10 mins.

Thai Spicy Basil Chicken Fried Rice

hmm. i've made this before, using a very similar recipe, and LOVED it but something was missing in this. it was good, but not sure it was worth all the prep work. not sure why the rice needs to be chilled first b/c the end result is just like i took the chicken mixture and mixed it with jasmine rice that i'd just cooked - in other words, there's nothing "fried ricey" about it, imo. maybe it needed more spice? i used chile paste instead of serrano peppers, but i've done that before and it was great... i'll keep playing with the leftovers & see if i can find the "missing" ingredient!

Low-Fat Watergate Salad

i've made this for years - YUM! i don't add the yogurt, though. sometimes i do add marshmallows which are so yummy b/c they get so soft in the salad. also, pineapple tidbits are good with the crushed pineapple. i use fat free cool whip and splenda-sweetened pineapple.

Easy Grape Salad

my grandma's good friend used to make this a lot and she used sour cream instead of marshmallow cream and it is SO good - very light & refreshing. you do add a little sugar, but it's not too sweet. just a suggestion if you want to unsweeten this a bit!

Blueberry Dump Cake

i tried to make this a little less bad for us by using angel food cake mix, i can't believe it's not butter, and half splenda/half sugar (1/4c each). it was really good but the mixing the berries w/sugar first is REALLY not necessary as there is so much sugar in the cake mix. it's really cobbler-y and really good. i didn't have ice cream so put cool whip on top. good with a big glass of milk!

No Time to Cook Chicken

not crazy about this one. tasted pretty blah to me. used 4 frozen breasts, 1 can crm of chick, 1 can crm of mushroom, some minced garlic. cooked on low for 6.5 hrs then shredded & added sour cream. needed flavor so added black/red pepper mix & parm. to give it more texture i mixed it with spaghetti & put it in a little casserole dish, crumbled up club crackers on top and baked for a little bit - the crunch helped. the chicken actually tasted kind of like canned chicken for some reason & that really turned me off. it wasn't bad, i just don't think i'll make it again.

Salsa Chicken Burrito Filling

would give more than 5 stars if possible. really outstanding! just like the chicken you get in burritos in real mexican restaurants - shredded & lots of color & tons of flavor. made it in the slow cooker: 4 frozen breasts, 8 oz tomato sauce, 16 ozs salsa, 1 packet taco seasoning, minced garlic. cooked on high 4.5 hours then shredded it SO easily w 2 forks right there in the cooker. can't wait to make it again. SO YUM!!! and SOOO EASY! (love those crock pot liners! clean up is a snap!!)

Beef Tenderloin with Potatoes

this was my 1st time making beef tenderloin & this turned out really well. didn't do the potatoes like this recipe so can't rate those, but the beef was great. sooo tender - could cut it with a fork. i think something was wrong w my oven so i really don't know how long at what temp it cooked - i was aiming for 145 degrees/med rare, and it was prob more medium well, but still "fork cuttable." : ) we enjoyed it with a little marinade drizzled on top of each slice. will make again for sure.

Chocolate Chip Cookie Ice Cream Cake

great base & can really mix it up a lot w different flavors. i wanted to make a neoplitan one so i did an oreo crust, then the fudge topping spread over it (crust + topping was the best part!) - a layer of choc ice cream, a layer of homemade strawberry sauce (recipe on this site), layer of vanilla ice cream, choc frosting spread all over that, strawberry sauce on that, then little puffs of redi whip around edge & big puff in the middle. it was well-loved, but i learned that the strawberry sauce was a bad idea - frozen strawberries are REALLY cold & they just didn't work. next time i'll make the sauce to put on at the end. i was thinking a pretzel crust w a layer of peanut butter then chubby hubby ice cream might be delicious - will try that soon! i'm so glad i found the recipe - i know i'll use it lots. thank you!
