I am not a big fan of Red Enchilada Sauce in the first place, I much rather prefer Green Enchilada Sauce. But this recipe was just odd to me, wasn't that tasty, didn't remind me of an enchilada. But then again, maybe just me because I don't really like Red Sauce?? Who knows.

Fudge

super easy, super fast! And it's quite tasty too. not the best tasting fudge out there, but when you are in a hurry it's good enough. My brother in law requests this fudge all the time, so it's gotta be at least better than just okay :o) Line your pan with aluminum foil and pull out easy and cut up even easier. Good luck!!

Elizabeth's Extreme Chocolate Lover's Cake

This is one of my favorite cakes ever!! I am an extreme chocolate lover and this definitely hits the spot. I'm not a fan of the chocolate cream cheese icing, I usually substitute with a chocolate fudge icing instead. And the ganache is my fav!! Just heat up heavy cream in sauce pan (do not let boil) and pour over chopped up chocolate, stir until smooth, easiest way to make ganache!

Chicken Enchiladas with Creamy Green Chile Sauce

This green enchilada sauce is amazing!! We can't use anything canned do to all the allergies in the house and I stumbled upon this in my search for a homemade enchilada sauce, it was great!!! TRY IT!!! Yummy!!

Chicken Cordon Bleu II

I wasn't sure how to rate this because of the change I made do to what we had on hand, but decided that it deserved 5 stars no matter how you make it :o) YUM YUM YUM. Always get compliments on it and my husband is always requesting it. I omit wine and bullion and just use chicken broth instead. It doesn't take the 30 minutes to cook as stated, more like 10 to 15 I'd say. My mouth is watering just thinking about this gravy... yum. It's a keeper!!!

Unbelievable Rolls

I'm in the middle of baking these right now. But I just wanted to note that I am following this recipe with minor changes. First I let my dough rise in a cool oven with a pan of hot water in the bottom, and also let it bake with the pan of hot water as well. As for the recipe, it was super easy, I didn't knead it very much and left the dough sticky. I let my kitchenaid do the work. It rose to double it's size within 40 minutes and then I buttered my pans and my hands extremely well and shaped the dough. ...now I am going to finish this in 11 minutes when the rolls are done. but so far I am a fan of this easy recipe!! :o) .... Umm... Yumm. Very light and fluffy. they are a tad sweet, but i bet they would be scrumptious with butter.

Best Chocolate Chip Cookies

Yes, these are the best cookies!! I read a lot of the bad reviews, and I think that they must have just over cooked them. Take them out of the oven after 10 to 12 minutes. I let them cool a few minutes on the baking stone. Let them cool completely, and they are amazing... they are good for days... although they never seem to last that long. This is now the only chocolate chip cookie recipe i use!!!

Beef Stroganoff III

This is a staple in our home. I use our leftovers from a chuck roast so that I don't have to let the meat tenderize for an hour, much quicker to use the leftovers, and the meat usually turns out better too. Two meals with one roast... doesn't get much better than that!! Thank you for the recipe!! Everyone needs this in their home! (I do saute fresh mushrooms as opposed to using canned *ick*)
