I am not a big fan of Red Enchilada Sauce in the first place, I much rather prefer Green Enchilada Sauce. But this recipe was just odd to me, wasn't that tasty, didn't remind me of an enchilada. But then again, maybe just me because I don't really like Red Sauce?? Who knows.

super easy, super fast! And it's quite tasty too. not the best tasting fudge out there, but when you are in a hurry it's good enough. My brother in law requests this fudge all the time, so it's gotta be at least better than just okay :o) Line your pan with aluminum foil and pull out easy and cut up even easier. Good luck!!

This is one of my favorite cakes ever!! I am an extreme chocolate lover and this definitely hits the spot. I'm not a fan of the chocolate cream cheese icing, I usually substitute with a chocolate fudge icing instead. And the ganache is my fav!! Just heat up heavy cream in sauce pan (do not let boil) and pour over chopped up chocolate, stir until smooth, easiest way to make ganache!
