Quinoa and Black Beans

I added cooked chicken to it, wasn't very happy with the end result. Could have been the veggie broth I used, it was homemade and not very strong. It was my first time using quinoa and was bad timing as my puppy had just gotten over a case of roundworms and I couldn't look at it without thinking about worms. :(

Grandma's Gingersnap Cookies

I personally can't stand gingersnaps but decided to make these for my dad since he loves them. They ended up quite thin but nice and chewy with a slightly crispy edge.

Honey Key Lime Grilled Chicken

I used this marinade for wings, brushed on extra honey with lime juice while bbqing them. Was fantastic but will use more lime next time.

Broiled Tilapia Parmesan

Blueberry Buckle

I used frozen blueberries and ended up not baking it quite long enough. The middle wasn't quite done, but everything else tasted really good. My parents and picky brother approved so that's good enough for me.

Spelt Biscuits

I made them with soy milk and otherwise kept the recipe the same. They were tasty right out of the oven with organic honey spread on them but did not stand up well to the freezer. If I make them again I will probably make a half batch since I normally bake just for myself.

Too Much Chocolate Cake

Used this for my father's day dessert as my dad looooooves chocolate cake (and so do I). I used 2 9" round pans and made a nice layer cake, frosted with a simple chocolate frosting. The cakes were baked on friday and then assembled on sunday since a lot of the reviews said that it was best the next day. I omitted the chocolate chips. Everyone loved it.

Apple Crumble Pie

I used this recipe to make my very first fruit pie ever. I did change up a few things, but it turned out perfectly and was a very good base to start from. For the top crust I used whole wheat flour, a generous handful of oats, brown sugar and only about 3-4 tbsp of softened margarine. The filling was 3 golden delicious apples, about a 1/4 cup of whole wheat flour, cinnamon and then only 1/2 cup of sugar mixed up together before dumping into the pie crust. I also used a pre-made frozen store-bought crust. It was absolutly perfect after about 30 minutes in the oven at 375 degrees F and it tasted better the next day.

Ninety Minute Cinnamon Rolls

First time making cinnamon buns ever and they turned out great. The only issue I had was probably more my mistake then the recipes mistake...the pan overflowed with cinnamon/sugary goodness and burnt onto the bottom of the oven. It was more caramelly then I'm used to, which I liked, but it made a huge mess. I will probably use less margarine next time.

Pizza Dough I

Made this last night, proofed the yeast as that's what I normally do. Attempted to let it sit, but was too impatient and hungry. I should have pre-baked the crust, as the top of the crust under the toppings was still doughy, which I can't stand. It tasted good, but I added italian spices to the dough. Was very nice and crispy, but was just too thick for my liking, maybe my pan wasn't big enough but I could probably get 2 crusts out of one recipe if I rolled it out thin enough.

Beef Nacho Casserole

I love this recipe and have been making it for a variety of people for the past 2 years. I do make a few changes to the recipe depending on what I have on hand. I normally use medium salsa instead of mild, and use just plain cheddar cheese instead of the colby or montery. I also found it really nice to use taco or fajita seasoning instead of the chili powder.
