Easy Olive Oil, Tomato, and Basil Pasta

This really hit the spot! This is an awesome EASY vegan recipe. I made these modifications...mixed tomato, 4 garlic cloves minced, chopped basil and olive oil 2 hours in advance and let it sit out to room temperature, sauted a chopped onion in olive oil until soft. Added the tomato mixture to the onion for about 2 minutes just to warm it. Tossed with pasta and 1/2 small can of diced olives (like the picture). Salt, pepper, done! It was delicious!

A Good Easy Garlic Chicken

So easy... so good! I took some other reviewers advice and made a little gravy using chicken broth and instant flour with the pan drippings and I think that really made the dish. I will certainly make this one again and again!

Awesome Broccoli-Cheese Casserole

I loved this! It reminds me of a quiche but without the bread. I used low-fat and fat-free ingredients and it still came out great. It's SO easy, too! I had also thought that bacon or even cubed ham might be a good addition next time.

Mouth-Watering Stuffed Mushrooms

Very easy and totally delicious! I made 24 large mushrooms from 1 batch of filling, so I tried it 2 different ways. It's much better in a convection oven. The cheese on the top of the mushrooms brown like the image on the recipe.

Quick and Easy Brownies

As recommended, I used 1/2c less flour. I also added about 1/2c of chocolate chips and I really think that made them even yummier! I tried Alton Brown's recipe for brownies and I liked these MUCH better! Thanks!

Creamy Split Pea Soup

Excellent! I added a little garlic, as some of the other reviewers recommened and added a teaspoon and a half more salt. I also used a hand blender which worked wonderfully and was so much easier. Great, easy recipe. The crumbled bacon garnish adds such a nice touch!

Slow Cooker Beef Stroganoff I

I have read many reviews and my first change was I made this a "Pressure Cooker Stroganoff", rather than a "Slow Cooker". I used double the meat and double the gravy ingredients... this was my only mistake. There was too much gravy. I also didn't have mushrooms, but will add them next time. That will be my only other modification to what I had done already. I coated the meat in flour and browned it in a separate pot. At the same time, I sweat the onions in the pressure cooker. I used a boullion cube and an entire package of onion soup mix. I added garlic, worstechire and pepper, but no salt because the onion soup, worstechire and boullion have plenty. I added the browned meat to the gravy mixture and heat the pressure cooker on high until full pressure and then turned it down low for 60 minutes. The meat just fell apart in your mouth. Delicious! Thank you for this fantastic recipe!

Baked Asparagus with Balsamic Butter Sauce

This is one of my favs! I've made it a bunch of times. Side dish recipes get no easier than this. Because the asparagus cooks in just the cooking spray, they come out nice and crispy every time!

Almond Sole Fillets

This is a great easy recipe! I did a few things differently and would do even more next time. #1 - I cooked it in the oven for 20-25 min on 350 and then on low broil for another 10. This made the fish a little crispy on the edges, which I like. #2 - I chopped marcona almonds (YUMMY) and sprinkled them on top instead of regular almond slivers. #3 - Next time, I think that I will sprinkle the dill weed on top of the fish before putting the almonds on top and then sprinkle with lemon, salt, pepper and paprika separately, not mixed. It came out great, though, and I definitely will make it again!

Lentil Soup

Baked French Fries I

I didn't have chili powder and they still came out delicious! They were VERY crisp. I also cooked them 20 min on each side. Easy, excellent recipe. My husband loved them and so did my 2 year old daughter! So nice when you can please the whole family!

Amazing Chicken

This was good. I added a little powdered ranch dip mix into the mayo and sprayed the top of the chicken with cooking spray as others have recommended. It was tasty (flavorful) and crispy on the top... but a little bit soggy on the bottom. I think that next time, I may coat the chicken in the mayo mixture and just sprinkle breadcrumbs on top, as I've seen other reviewers rave about. It is really easy so in any event, I will continue to make it. It's much easier than breading and frying the chicken on the stove top. Like I saw another reviewer say, I would have given this recipe a 4.5, but there's no option for it. I reheated this dish 2 days later and it was even better! I warmed it in the toaster oven and then broiled each side for about 5-10 min until crispy. I think that next time I will broil the chicken on both sides before taking it out of the oven.

Chicken Pot Pie IX

Unbelievably delicious! I can't believe that I made it! My husband was SO impressed. I also added potatos. I cooked the chicken & veggies in chicken broth and then used it to make the gravy (and I still had enough to make chicken, veggie & rice soup!) I also used pearl onions and like many other reviewers, I par baked the bottom crust with a little egg white brushed on for 5 minutes... then after filling the crust, I brushed more egg whites on top. My husband was very late for work, so I had completely cooked it, removed it from heat and reheated about 3 hours later. I can't imagine that anything was lost in doing that either. .... Looking forward to leftovers!

Golden Sweet Cornbread

I listened to other reviewers and reduced the sugar and added a little more oil. I also cut back on maybe 1/8 cup of milk and added a can of drained corn. I also baked them in a muffin pan. They were delicious, but still just a touch too crumbly.

Pesto Chicken Florentine

This is definitely now one of my favorites! I crave this dish. I did a few things a little differently. I probably used about double the pesto, I used a premade jar of alfredo sauce, and I grilled a package of proscuitto with the chicken at the same time I added the spinach. I also used tortellini for the pasta. YUMMMMMY!

Chicken Noodle Casserole I

Everyone love it and it was SO easy. I used 2 cans of cream of mushroom/chicken soup since I was able to find 2 in 1. I also added a bag of frozen peas. I will make it again soon, that's for sure!
