When making the Roux I let the butter and flour get a nice cream color before adding the milk. I used 1 1/2 cups of 1% milk and 1/4 cup whipping cream. Then I cooked until it was nice and thick. I thinly shredded some marble jack cheese to add when served. Delicious !!!!
