I am a cook-for-fun who enjoys cooking for my fiance and my 17 month-old son. I don't have as much time for cooking intricate meals as I would like so I especially enjoy recipes that seem intricate but are really quick and easy. :)
My favorite things to cook
I love trying world cuisine, especially Mediterranean and Indian food. I also enjoy baking cookies!
My favorite family cooking traditions
I have five brothers, so growing up we always had large meals that needed to be ready in a jiff. I was always amazed at the one pot meals that were so delicious -- great chicken noodle soup, beef stew, chili, spaghetti. Nothing gourmet, but it sure was delish.
My cooking triumphs
My fiance asked me to make my jambalaya again.
My cooking tragedies
I find it most tragic when I make something wonderful, but forget how I made it.

Restaurant-Style Taco Meat Seasoning
I did not have beef bouillon on hand so I used beef broth instead of water. It cooked down much quicker than anticipated. This was a very easy way to season taco meat... I shall never buy the seasoning packets again!

Brownie Biscotti
The named is completely accurate for this biscotti -- it really does taste like a brownie! I followed user suggestions regarding the temp for baking it the second time (I baked at 250 for 10-12 minutes). When cutting the biscotti I had a few break but I think that had more to do with dense sections of chocolate chips making that area more weak than anything else. I enjoyed this recipe and will be using it to make some tasty holiday gifts.

Gary's Stuffed Mushrooms
I made this for my DH's 30th birthday and it was a hit! I cut the recipe in half for the two of us and I found that I had more than enough stuffing and garlic butter. The stuffing is so rich that I may use less next time so that the mushroom can come through more. I had lots of extra garlic butter and I may opt to leave it out next time and just lightly oil the caps before going into the oven. I had a spare lemon around so I squeezed the juice over top before serving... it added a little something something extra. Thanks for the great recipe!
