Amazing Greek Pasta

Feta Chicken

Fantastic recipe! A new family favorite... I've made it twice in 10 days. Last time I was running late so I didn't even bother to pound out the chicken breasts. I just placed the breasts in a greased baking dish, topped with about 1/2 the container of feta cheese (used garlic/herb), covered with bread crumbs and drizzled with olive oil. Wonderful, moist, delicious... I'll make this again and again!

Fruit Dip I

I added just about 2 tsp. of maraschino cherry juice to this dip... pretty color and added a nice hint of cherry flavor... everyone loved it, especially with strawberries. The family is begging me to make it again!

Banana Split Cookies

Very good cookie... I followed other reviewers suggestions and added 1/2 c. mini chocolate chips, 1/2 c. dried cherries and 1/2 c. chopped nuts. Next time I might add more mashed banana too. Nice to find an alternative to banana bread when you have over-ripe bananas!

Cathy's Banana Bread

The whole family loved this banana bread; it is really moist and delicious! I did add about 1/3c. extra mashed bananas rather than throw any away. Also added 1/2 c. chopped dates and 1/2 c. chopped walnuts. Baking time for me was about 1 hr. Thanks, Cathy!

Brown Sugar Meatloaf

This is a fantastic meatloaf recipe! Everyone in the family loved it. I did substitute ground turkey for the ground beef and oatmeal for the saltine crackers. I mixed up the brown sugar and ketchup and put that on top of the loaf as many have suggested. I know I'll be making this again and again....thanks so much Starbuck!

Angel Chicken Pasta

Very good and the chicken comes out nice and tender. I used reduced fat cream cheese the first time I made it and did not like the result as much as when I used regular cream cheese. I always just add dried chives or fresh if I have them, instead of using the flavored cream cheese. Anyway, next time around I'm going to make this in the crock pot as others have suggested. Thanks for submitting this "keeper"!

Cranberry Chutney I

Very good cranberry chutney. I followed other reviewers suggestions and cut the vinegar back to 2T. Glad I did, because I really don't think my family would have liked it with the whole 1/2c. of vinegar in it. Also used golden raisins. Very nice color, flavor and texture.

Awesome Sausage, Apple and Cranberry Stuffing

Excellent stuffing recipe! I used a bag of Brownberry cornbread stuffing cubes and 1 lb. of Bob Evans sage pork sausage. Everyone loved it and wanted the leftovers. Next time I will probably add more broth to the recipe, but that's a personal preference. This one is definitely a keeper!

Easy Homemade Chili

Really great tasting chili and so easy to make! My husband and I have always made the kind of chili you cook all day, but we had chili cravings this evening and decided to look for a quick and easy recipe. We doubled the recipe (except the meat... used about 1.5 lbs.) and added a can of Ro-tel to spice it up a bit. We'll make this often, thanks Tobi!

Garlic Chicken

What a wonderful tasting, easy to prepare chicken recipe. The secret is warming the garlic/oil mixture. I'd tried a similar recipe that didn't have that step and it just didn't have the great garlic taste that this one has. Thanks so much Carol for a recipe that I'll use over and over.

Apple Loaf

Excellent quick bread, but we did make some changes after reading the other reviews. We (my son and I made this for a math class on fractions) added 2 c. of shredded, unpeeled apples instead of 1 c., changed the butter to 1/2 c. of vegetable oil, and added 1 t. cinnamon and 1/2 t. cloves. Ended up baking for 70 minutes. It was a great success in his class, as well as with the family (we sneaked a piece!) Very moist and delicious... I'll make this one again!

Chipotle Chicken

I'm giving this 5 stars because my husband absolutely loved it! The rest of the family (including me) give it 4 stars because it was so hot... wow! Great smoky flavor, but just beware this has some intense heat. I did add frozen corn and green beans to the recipe and reduced the spinach by 1/2. The kids and I used extra sour cream at the table to cut the fire. I also made cornbread which was a nice addition. Oh, as another reviewer mentioned, the time under the broiler wasn't nearly long enough to cook the chicken... I ended up baking it for an additional 30 minutes at 350.

Chicken Enchiladas I

Overall, this was very good and the family loved it. However, I made a big mistake by not reading the "most helpful" reviews of this dish. If I had read them I would have known to omit the water and add only 1/2 of the tomato sauce. The recipe as given is so soupy that it was very difficult to make the enchiladas. I ended up adding a can of refried beans to thicken the mixture up. Also, this isn't a quick dish to make so allow yourself plenty of time. Next time I'll use the pre-cooked chicken strips from the store.

Irish Boiled Dinner (Corned Beef)
