Vegetarian Chickpea Sandwich Filling

My vegetarian sister taught me to make this several years ago. It's a great sandwich filling and also tastes delicious as a filling for stuffed tomatoes (very pretty topped with fresh parsley). I make mine in the food processor and always add a dash of Tabasco to it. We've also made it with Dijon mustard replacing the lemon juice... very versatile and yummy recipe!

Chap Chee Noodles

Chap chae is one of my favorite Korean dishes... this is different than the version I'm used to but still very good. My friend Yeonsoon used to make this for parties when we were in college. Her version was made without meat and contained more sesame seeds and sesame oil. Thanks for a nice variation.

Miso Soup

Really great miso soup! We had enjoyed a delicious miso soup at a Sushi restaurant in Cleveland,OH and I was trying to come close to that. We actually thought this one was better. I used a red miso paste, firm tofu, green onions, and 4 thinly sliced Shitake mushrooms. Will be making this often... Oh, I bought the miso paste and dashi from Asiangrocer.com since our small town grocery stores don't carry these items.

Garlic Brussels Sprouts

Roasted Brussels Sprouts

This recipe taught me a lesson... read the bad reviews as well as the good ones! I made these exactly as directed and what a disappointment! DH and I love brussel sprouts, but these were inedible! They just tasted burnt... there was no sweet taste to them... we'll stick with our other recipes. Sorry :(

Old-Fashioned Rice Pudding II

I was so glad to see this recipe! This is the style of rice pudding we (my 3 sisters and I) were raised on. My Grandma always called it "Poor Man's Rice Pudding" because of the small amount of rice used. I remember her telling me that her Grandmother had made it for her when she was a little girl! This is the original comfort food in my opinion! The only thing Grandma did different(from what I remember) was to add about 1t. each of vanilla and cinnamon to the recipe. Again, thanks so much for the great memories and giving me the chance to share this with my kids!2/01/08 I have to add some add'l comments to my original review after seeing the bad reviews this recipe is receiving. As the submitter states you have to stir this pudding every 15 minutes during the first hour so that the rice gets distributed evenly. Also, this pudding takes a long time to cook. Two hours is the time I usually end up baking it. Finally, the pudding usually ends up with a brown "skin" across at least part of the top after baking. This is o.k., it's supposed to be there. My sisters and I used to fight over this part! I guess it just depends on what you were brought up with. To me, the thick, stove-top type of rice pudding just doesn't taste good at all. This recipe, on the other hand, is sublime :)

Beth's Spicy Oatmeal Raisin Cookies

Excellent cookies! That 1/2 t. of cloves makes all the difference. I used all butter, as other reviewers suggested. Also used Splenda Brown Sugar Blend (you only use 1/2c. instead of 1c.) You'd never know it... they were great! Only problem is that I should have doubled the recipe; they were gone in a day and a half!!

Zesty Oven-Fried Rice

A nice dinner... definitely easy to make. I had a pound of hamburger and wanted to try something different and this fit the bill. Next time I would add more veggies, some carrots and/or red pepper for color. Minced fresh ginger would be a great addition, if you like that flavor.

Baked Slow Cooker Chicken

Great tasting, tender chicken! I used Yukon Gold potatoes and baby carrots in the bottom of the crock pot in place of the aluminum foil. Seasoned chicken (which weighed about 4 lbs.) with garlic powder and Lawrey's seasoned salt inside and out. I also put some celery and a small peeled onion in the cavity. That was it! I had a very full crock pot so I left it on high for 2 hrs. and then turned to low and left it alone for 7 hrs. The flavor of this chicken is fantastic and it is so tender! My husband said he loved coming home to such a great smelling house :) Thanks for a recipe I'll use over and over!!

Russian Mushroom and Potato Soup

Wonderful soup! Everyone loved this. The only change I made was to use light sour cream in place of the half and half. I loved the addition of the fresh dill at the end. To me that made the soup really special. Next time I make this I think I'll puree some of it as other reviewers suggested. I think I'd do that before I add the mushrooms though. Thanks so much for this great recipe!

Slaw-mmin' Wraps

A great big WOW... these are absolutely fantastic! It's one of those recipes that is so original and delicious that it really deserves more than 5 stars. I did made one change and that was to omit the broccoli slaw and cabbage and just use a bag of regular cole slaw mix. If you use already prepared hummus and pre-cooked chicken from the grocery store this healthy and filling meal would be ready in just minutes. Thanks so much for this great recipe!

Baked Ziti I

Excellent, easy dinner. I divided this into 2- 8" square pans and froze one for later. I also followed another reviewers suggestions and mixed the sauce with the ziti, put it into my greased baking dishes, then layered on the provolone, the sour cream and the mozzarella, sprinkled with parmesan, covered with foil and baked as directed. Everyone loved this... I'll make it often!

Barbie's Tuna Salad

Thanks so much for this great recipe! The only change I made was to use less mayo (about 4T.) My husband and I love curry so this was a match made in heaven for us. I use the tuna in the pouch which I think is moister and has a better flavor. This is the tuna salad I'll make from now on!

Hamburger Steak with Onions and Gravy

A delicious, easy dinner... I doubled the gravy by using 1 beef boullion cube in 2c. of boiling water. I didn't double the flour because the gravy was thickening up nicely without it. Also, I didn't salt the gravy as it tasted salty enough. I tried a hint from another reviewer who used 1 tsp. vanilla in place of the sherry and it was really a nice flavor in the sauce. I thought it sounded kind of strange but it was a delicious addition. Thanks for a recipe that I'll make again and again!
