Grilled Eggplant, Tomato and Goat Cheese

Great tasting eggplant! I followed other reviewers suggestions and grilled each eggplant slice, then topped with fresh basil, goat cheese, and finally a tomato slice. I left them open faced and just closed the grill for a few minutes to melt the cheese. To serve I topped each with freshly ground black pepper and a parsley sprig. It was so simple and tasted fantastic. Next time I think I would brush the tomato slice with the olive oil/balsamic mixture, just because they kind of dried out on the grill. Thanks Carolyn for a keeper!

Zesty Coleslaw

This is my new favorite coleslaw! Love the addition of horseradish and dill weed... the only change I made was to only use mayonnaise (about 3/4C.) because I was out of Miracle Whip. Oh, I also added some extra vinegar, maybe 1T. total. Thanks for a delicious recipe!

Serbian Ground Beef, Veggie, and Potato Bake

This was so good! My husband and our 2 sons weren't so sure about this one when I told them the spices I was using, but one taste and they were hooked. I used only celery and onions, since that was what I had on hand. I sauteed the meat with the veggies, then added the spices (used 1/4 t. cinnamon and 1/8 t. cloves) along with 1/2 can of low-fat cream of mushroom soup instead of the cream. I used about 6 potatoes and it didn't seem like too many at all. Definitely cover with foil... I baked it at 375 for one hr. Delicious!

Simple Country Ribs

What an easy and great recipe for tender, flavorful country ribs! Everyone in the family loved these. I boiled about 3 1/2 lbs. for about 1 1/2 hrs. Didn't even bother with the grill... the smell was so wonderful we just sat down and ate 'em up!! Thanks so much for a keeper recipe!

Chickpea Salad with Red Onion and Tomato

This recipe is a real winner... I tripled it and served it at our son's graduation open house. It went quickly and people made a point of telling me how great it tasted. I used 3 suggestions from reviewers: 1) Added about 3T. balsamic vinegar in addition to the lemon juice 2) Added about 2 big handfuls of julienned baby spinach leaves along with the parsley (used Italian flat-leaf) 3) Added about 1 pt. of halved grape tomatoes in place of regular tomato ... also, don't skip the salt and freshly ground black pepper. Thanks so much for a great recipe I'll use often!

Creamy Au Gratin Potatoes

I doubled this recipe for our Easter dinner and it was a hit. The only thing I did differently was to add some Swiss and Parmesan cheese along with the sharp Cheddar, since I only had about 1 c. of the Cheddar. All together I had about 2 c. of grated cheese and that seems like plenty. I added garlic powder to the sauce and next time I think I'll do the minced garlic as other reviewers have suggested. It really gave the sauce a great flavor. I'd also chop the onion next time rather than leave it sliced. Just easier to eat I think. I made this the night before Easter and then took it out of the fridge in the morning and let it come to room temp. At dinner time I reheated in my oven for about 40 min. at 325F. It was perfect! Thanks for a keeper!

Honey Glazed Ham

I cut the glaze ingredients in half and subbed brown sugar for the corn syrup. I got lucky and this amt. was just right for my 10 lb. ham. I ended up baking it for about 2hrs. 15 min. since it was so big. The results were delicious! This will be our Easter tradition. Thanks so much for a great recipe!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Fantastic recipe! The cream sauce is to die for... loved the addition of the pesto. I made this for my son's 18th birthday. Everyone loved it... definitely a recipe that will impress your guests. I did a couple things differently... I doubled the sauce as suggested by another reviewer and used 2% milk (along with the cream) instead of whole milk. Oh, and I used only 1 t. of salt, just in the sauce... the shrimp didn't need any. Thanks so much Robbie for this great recipe!

Goat Cheese and Spinach Turkey Burgers

These are really great turkey burgers! Very flavorful and moist. I doubled the recipe and used suggestions made by the other reviewers, such as using sauteed fresh spinach. For the 3 lbs. of turkey I used 1C. of breadcrumbs, 2 eggs, and about 3 ozs. of goat cheese. Half of the burgers went into the freezer for another meal and the others I broiled in the oven. My hubby and 2 teenage sons loved these so much that we had the ones from the freezer 2 nights later!

Braised Balsamic Chicken

Delicious and very easy to prepare. I added 1T. of brown sugar as suggested by other reviewers to cut down on acidity, but I really don't think the recipe needed it. Next time I'll make it without the sugar. The balsamic I used was surprisingly mellow! Great recipe!

Fried Rice with Cilantro

Irish Soda Bread

Made two loaves of this yesterday and it is wonderful. I'd give it more than five stars if I could. I've made several types of soda bread over the years and read lots of recipes for it, but this version sounded simple and the reviews were great so I thought I'd give it a try. I made it exactly as stated, baking for about 65 min. The only thing I will probably change the next time is to add more caraway seeds and reduce the amount of raisins, but that's a personal perference. I'll serve one loaf with corned beef and cabbage to our guests tonight at dinner. The other loaf we sliced and toasted. My family devoured half of it at breakfast!

Easy Chicken Curry

This recipe provides a great starting point for a delicious, easy curry. First I thinly sliced 3 large chicken breast halves and browned them in olive oil. While they were cooking I started the onion (in 3T. olive oil) in a separate skillet. To the onion I added sliced, fresh mushrooms and some frozen peas. When the veggies were heated I added 3 T. curry, some hot pepper flakes, 2 C. chicken broth and 1/2 C. unsweetened coconut milk. Finally, I stirred in the cooked chicken strips and let the whole thing cook for an additional 15 min. to reduce the broth. Served this over Texmati rice to my family of 4 and everyone really loved it! The 3 T. of curry powder seemed like plenty to us, but that's personal perference. This recipe would get 5 stars except that it had to be tweaked quite a bit.

Sausage Balls

The great reviews of this recipe saved me a lot of aggravation with this one... thanks everyone! I left the sausage out for about 20 min. before starting the recipe and finely grated the cheddar cheese by hand... those were the two best ideas from the reviews. Then you really have to get in there with your hands (those disposable thin kitchen gloves work great for this part) and knead the dough. It was kind of fun actually :) Also, as many reviewers have suggested, line your baking sheets with parchment. I had no sticking whatsoever. Finally, my own suggestion is to bake them longer than 10 min... I baked mine about 20 min., flipping them over after 10 min. This could partly be my oven's fault, but I'd say you'd at least want to bake for 15 min. There's nothing worse than an undercooked sausage ball... yuck! Anyway, the final results were very yummy and I've got a lot left over in the freezer ready and waiting for Superbowl Sunday!!!

Baked Omelet Squares

This is so good and very easy to make. I like to make breakfast suppers occasionally, and this recipe worked perfectly for that. We had leftover honey-baked ham from New Year's and it tasted great in this recipe. I left out the jalopenos because we didn't have any... next time I'd probably include them. I did add a couple of healthy dashes of tabasco to the eggs to give them some zip. Thanks for submitting this!

Cranberry Nut Bread I

This is such a delicious quick bread. I really like the suggestion of one reviewer who wrote that she left the cranberries whole... that way you get the maximum flavor. I quess my only (very small) complaint about this bread was that I wanted more cranberries. I would probably double the amount next time. Thank you Karin for submitting this recipe! p.s. I made another batch and baked it as mini loaves... recipe made 4; they were done in 25 min.... love this recipe!

Coconut Macaroons III

We have a tradition of always making these macaroons at Christmas. They're really great! We use 1 t. vanilla and 1 t. almond extract as others have suggested. Also, mixing the extracts and condensed milk first and then adding it to the coconut mixture makes the whole process much easier. Third, make sure to use parchment on your cookie sheets. Finally, top with red or green candied cherry halves to make them more festive. The taste is fantastic and they look great on your cookie plates!

Agedashi-esque Tofu

Delicious tofu recipe! After frying, I sprinkled the cubes with toasted sesame seeds and green onion and served it with a sauce recommended by another reviewer.... soy sauce, combined with a little sesame oil, red wine vinegar, and grated, fresh ginger. Served a stir-fry of broccoli, mushrooms, cabbage and onion as a side dish. Everyone loved it!
