Foolproof Chocolate Fudge

Very good and easy to make fudge. We made the milk choc/semi-sweet choc. variation w/o nuts for the first run. Now we're going to try other combinations. We refrigerated it over night and it was very hard to remove from the pan. Will try putting the pan in hot water as another reviewer suggested... thanks for the tip!

Kellogg's® Chocolate Scotcheroos

I read about these bars on the recipe exchange... wow, they're delicious! My son says he likes them better than marshmallow rice crispy treats and those were always his favorite. I would just suggest cutting them while still warm because they're difficult to cut when cool.

Cranberry Gelatin Salad

What a delicious jello salad. Everyone loved it. I used two pkg. of sugar free cherry jello and just sprinkled chopped pecans on top. When I make it for Christmas this year I'll try the cranberry jello and whole cranberry sauce just for something different. Thanks for sharing a great recipe!

Cran-Broccoli Salad

Very good salad. Next time I would probably reduce the oil to 1/3 c. This is a recipe that really could be played with... I liked the tarragon suggestion from another reviewer. My son suggested sunflower seeds which sounded good too. I'd probably increase the amount of dried cranberries next time just because I love 'em!

Chinese Roast Chicken with Gravy

This chicken, along with the gravy, served with steamed white rice and green beans, made a delicious and easy Sunday dinner for my family. I used other reviewers' suggestions and stuffed the chicken with chopped onion, garlic and ginger, moistened with a little soy and sesame oil. Next time I'll try stuffing this mixture until the skin of the breast as well. I rubbed the outside of the bird with the sesame oil first, then brushed on low sodium soy sauce. I poured one cup of chicken stock (not broth, which has higher sodium) in the bottom of the roasting pan, set the bird down into the pan, and roasted it at 400 for 1/2 hr. Then lowered the heat to 350 and let it cook for 1 1/2 hrs. The gravy (thickened with 2T. cornstarch mixed with a little water) was perfect, no need for any add'l salt or pepper. Thanks so much for a great recipe I'll use over and over!

Oranged Cranberry Sauce

This delicious sauce has become our family tradition at Thanksgiving and Christmas. The first two times I made it I reduced it by half thinking it would be too much sauce. Since then I've always made the full recipe. By the second day it's entirely gone and someone is asking me to make more. I'm not sure what it is, the cinnamon, the o.j. but it's really wonderful. Thanks Barbara for sharing this gem!

Cabbage Roll Casserole

This casserole came out great even though I had to make substitutions. I was out of tomato sauce, so I subbed two cans of tomato soup and 1 small can of tomato paste. All out of onions too, so I used dried onions and some onion powder. Only 1 lb. of ground beef, oh well, used what I had. In other words, this is a great recipe for those times when you didn't get out to the grocery store :) I know substitutions offend some of you, but hey, isn't that what being a good, creative cook is all about? Anyway, Nancy, thanks for submitting this recipe. It's definitely a keeper!

Cheesy Potato and Corn Chowder

This was one of those "Wow" recipes for my family. Everyone really enjoyed it. I like recipes that taste like they took a lot more work than they actually do, and this was definitely one of those :) I had frozen fresh corn from this summer so that went into it and I used 2T. butter instead of margarine. Other than that no changes. My son and I thought it was just the right amount of spiciness, but my husband added red pepper flakes to his. I know I will make this recipe over and over. Thanks so much for sharing it!

Glazed Meatloaf II

Yum!! This recipe makes an excellent meatloaf. My son and husband love meatloaf, so I've been trying various recipes to see which one they like the best. After tasting this for dinner last night, they both said don't try any more, this one is the best! As for substitutions, I added 3/4 c. of oats in place of the bread, and used balsamic vinegar in place of the lemon juice. Next time I will try the lemon juice, but the vinegar worked fine and I happened to be out of lemons. Oh, one great tip that I got from another reviewer is to line the bottom of your 9x5 pan with bread slices when making a meatloaf. The bread soaks up all the fat and then you just throw the bread away. Works great!

Downeast Maine Pumpkin Bread

I have to add my two cents worth... this is the BEST pumpkin bread I've ever made. This is the first time I've tried this recipe so I didn't make any changes and it came out fantastic. The only thing is that I had to bake it about 65 min. at 350. Of course, I only used two loaf pans because they were bigger in size. I'll make this again and again... thanks so much for this treat! P.S. I'm serving it tonight for dessert with vanilla ice cream YUMMMM!

Corned Beef and Cabbage

Very easy and the results were delicious. For me, cooking corned beef in the crock pot does require the addition of the additional spices, garlic, vinegar, etc. as well as the spice packet that comes with the brisket. Just seemed to need the extra flavoring for all those hours of slow cooking. My crock pot wasn't big enough to hold everything, so I just added the carrots with the meat. I cooked the potatoes and cabbage before the meal. Family loved it... thanks Karen!

Creamy Dill Cucumber Toasties

These are so easy and taste great! I used a small loaf of sliced, party-sized pumpernickel and they sure disappeared quickly at the party we attended. Oh, I also used an English cucumber. They're worth the price in my opinion. No big seeds and no peeling necessary. This is a fantastic tasting and very nice looking appetizer... thanks for sharing the recipe!

Old World Escarole and Beans

I'm happy to be the first to review this recipe. It is delicious! We live in a predominantly Italian area of northeastern Ohio and my husband and I have enjoyed this soup in several area restaurants... this version is very authentic tasting. Just be sure to have warm crusty bread on hand, and if you're like my husband, extra red pepper flakes :) Next time I make it he said be sure to double it!

Tropical Turkey Meat Loaf

Excellent turkey meat loaf! We especially loved the pineapple-jalapeno salsa to top it with. Very original and delicious. Only a couple things I might change next time... 1)add some chopped cilantro to the salsa 2)bake just 1 hr... time as given was too long.. at least in my oven. Thanks for a "keeper" recipe!

Pork Chops With Red Cabbage

This is a really delicious way to fix pork chops! My friends from Germany fix red cabbage with cranberry sauce, a little vinegar and sugar, cut-up apples and bacon. They serve it as a side dish along with red potatoes when they're serving roasted pork. Thanks so much for this yummy variation. My whole family loves it!

Savory Meat Loaf

Very good meatloaf... if you like a tangy sauce on your meatloaf this is definitely the recipe for you. Next time I think I'll cut the vinegar back to 1T. and probably add 1T. of horseradish. Also, I'd like to try it w/ ground turkey instead of hamburger next time around. I'm sure this will be a great meatloaf for sandwiches!

Vietnamese Tofu Salad

I'm giving this 4 stars as an average score for the whole family. My husband and one son absolutely loved this one and proclaimed it a 5 star recipe. My other son and I would probably give it 3 stars, mainly because we felt the cilantro really overpowered the entire salad. I really liked the tofu cooked this way and would probably double that the next time around. Also I'd add the peanuts at the last minute so that they would still be crunchy. If you love the flavor of cilantro you would definitely love this salad!

Baked Sweet Potato Sticks

Really yummy and so much better for you than white potatoes. I like to add additional spices as other reviewers have suggested. I use cinnamon sugar on them when I'm serving pork chops. Add a green veggie and baked apples and you've got a delicious, easy autumn meal.
