Yummy Couscous Salad

We all thought this recipe lived up to its title. I used 1/2c. of homemade ranch (Ranch Dressing II from this site) mixed with the yogurt and cumin. For the couscous, I used a whole wheat variety and subbed vegetable stock for the water. Oh, I also added some dried cranberries because I didn't have enough raisins. The only minor complaint I had was that there was too much red onion, but I'd used a fairly large one, so I have to take some of the blame for that. Next time around, I'd only use half an onion or a small one. Anyway, it's a really great salad... Thanks for a keeper recipe!

Ranch Dressing II

Great ranch dressing! I took other reviewers advice and used a combination of 1/2c.buttermilk, 1/2c. mayo and 1/2c. sour cream. Also increased the garlic powder to 1/2 t. It was so easy, no more bottled ranch for us!

Apple Cole Slaw

My family loves cole slaw and I enjoy trying the many different varieties of this classic salad. This is a great sweet slaw. I love the original recipe but I have also made this one adding sliced grapes and chopped walnuts. I usually leave out the green pepper for this variation. It ends up like a Waldorf salad/cole slaw... really good!

Summer Squash Pizza Crust

The flavor was fine, if you like squash, but IMO this crust was just too much work. When I'm having a "pizza night" I tend to want something quick and easy for the crust. I agree with other reviewers who said they could see this more as a flatbread, cut into sticks or wedges. Also, definitely use parchment, as another reviewer suggested, that makes the whole flipping issue so much easier.

Jalapeno Popper Spread

Super easy and great tasting! I just made half a recipe because I only had 8 oz. of cream cheese. Used light mayo to cut calories a little bit. It was really yummy. Made a nice pre-dinner appetizer for my family. We had it with tortilla chips, but will try the french bread idea next time around. Thanks for this keeper recipe!!

Ratatouille

Excellent ratatouille! I'd always made mine on the stovetop but this is a nice variation when you need your burners for other dishes. Personally, I prefer to add the parmesan at the table, but either way works.

Crunchy Coleslaw

My whole family loves this. I vary it a little by using Oriental flavor ramen. Also I toast the almonds lightly by putting them in a dry cast iron skillet over medium heat. It takes about 5 min. to get them a nice brown. Yum!

Sean's Falafel and Cucumber Sauce

Great recipe! I made the cucumber sauce first, as others suggested, and it was really good. Probably will make more of the sauce next time because everyone used quite a bit. For the patties, I browned them in a skillet with olive oil spray and then baked them at 375F. for 20 min., flipping after 10 min. They were great this way, although a little more crumbly than if they had been fried. My family loved these so I know I'll be making them again. Thanks Sean!

Spicy Pakistani Zucchini

We all loved this! I used 4 large squash, 2 were zucchini and 2 were yellow summer squash. Also, I was out of fresh tomatoes, so I dumped in a can of diced tomatoes with their juice and then reduced the water to 1 c. Also, I didn't see the need to seed the squash and I ended up cooking this more like 30 min so it would be nice and tender. It came out great, very colorful and flavorful. Served it over jasmine rice... will definitely make this again. It's a winner!

Addictive Sweet Potato Burritos

Wellll, obviously I'm one of the few who didn't find these all that great. First of all, I just want to say that I made these exactly as stated, and my DH and I love sweet potatoes and love Mexican, so we thought we'd be crazy about these. But IMO they lacked something, not sure what, maybe more spices. DH said they were just kind of blah and I had to agree. Sorry for the bad review :(

Gourmet Root Beer Float

For some reason here in northeast Ohio we call these Boston coolers. So good on a hot summer day and I agree with the other reviewer who said to use Stewart's root beer... really fantastic!

Crab-Artichoke Pizza

I'm updating this review because I've made this pizza quite a few times now and made little changes to lower the fat and calories. I started using the new spray-on salad dressing (I use the Caesar flavor) as the base in place of the olive oil. Just a few sprays and it's ready for topping. I use the fake crabmeat to cut costs and marinated artichoke hearts, cut up, to replace the ones packed in water. Sometimes I add sliced red onion and mushrooms if I feel like it. I top it with the reduced fat Italian cheese blend and a little parmesan. Really delish! 6/07/08The whole family really enjoyed this... thanks for a keeper! Great combination of flavors!

Poor Man's Sandwich

My husband told me about this sandwich when we were first married... I thought he was joking! But after 21 years of marriage he's got me liking them almost as much as he does. We always add lettuce to ours... makes a nice sandwich for those times when you didn't make it out to the grocery store (Hey, what happened to all the ham!) or you're having those "right before payday" blues :)

Baked Tofu Bites

We thought this was better without the liquid smoke. The second time around I added 1 T. of sesame oil and 1 T. Thai chili sauce, which combines sweet with hot... Yum! My two teenagers loved tofu this way. I served it with stir-fried veggies and jasmine rice... it made a really nice meal.

Spanish Slaw

We love this recipe... I've made it both with and without the addition of cilantro. We like it better with about a handful added. I've also used red, yellow and orange bell peppers,chopped, about 1 C. total. It makes the slaw colorful and adds a nice flavor. Really a nice addition to our table...thanks for a keeper!

Roast Beef and Gravy

Always a good way to make roast beef. I also add additional water (about 1 c.) to make extra gravy. I like adding 2 cloves minced garlic too, for extra flavor.

White Chili with Ground Turkey

We all really enjoyed this chili. Thanks to everyone who wrote about reducing the amount of chicken broth! It would have been soup using 5 C. as written. I ended up using 2 C. Also I threw in an additional can of black beans (rinsed and drained) and used the entire 1 t. of cinnamon. It's amazing how you can't taste it specifically, but I thought it really added to the overall depth of flavor. Thanks for a new family favorite!
