I have to edit my first review. I made this for my daughter's preschool class and 2 out of 18 children did not like the icing, that is pretty good for a bunch of 3 year olds. I used powdered sugar and did not use the entire cup, but I put 4 tsp of corse sugar in with the whipped cream. it was very yummy and light tasting. I put the icing in the fridge over night before I pipped the minin banana muffins and it pipped very well. I also kept them refidgerated untill they were ready to be eaten. I will for sure use this recipe again although my cream cheese hating son does not like this recipe at all, I think it is a "healthier" alternative to the traditional butter and shortning icing. oh and I used maple flavour instead of vanilla, but you could use pretty much any flavour you like.

wonderful! simple easy ingrediants and it turned out great. I added garlic and pepper.
