Scalloped Potatoes and Onions

Pesto Cream Cheese Spread

This was OK, really didn't work out that well. Even after 24 hours in the fridge the pesto did not firm up and so it didn't look right. The flavors were not a great mix, but maybe that's just personal taste.

Super Bowl Bites

These were great! I made them lastnight for Monday night football. I used Morning Star "soy crumbles" instead of beef. I had two people who aren't vegetarians and they both loved these. I thought they were delicious, too and I will make these again.

Chicken Cordon Bleu II

I made this for my neighbors and they said it was good. I did not try it because I don't eat meat, but it smelled delicious. I substituted half & half. I have to say that 6 tablespoons of butter was too much, the chicken seemed to be poaching in butter and the sauce was extremely oily looking when it was prepared. I should have poured off most of the grease, but I didn't, so I ended up trying to blot the big greasy areas with paper towels. Smelled wonderful, tasted "good" to my neighbors and looked very greasy that's why I gave it 4 stars.

Thai Spiced Barbecue Shrimp

This is delicious, I made this for a 4th of July party and nearly everyone loved it and two people asked for the recipe. I didn't have curry paste so I used powder mixed with olive oil... it may not be exactly as it should have been, but it was delicious!

Amy's Cilantro Cream Sauce

This is great! Yummy, garlicy, I used this to top homemade mexican pizzas and it was perfect. I also added a seeded and chopped jalepeno. Next time I will try substituting 2 cloves of garlic for the powder.

Excellent! I used 1/2 shrimp & 1/2 crab and added a full bunch of chopped cilantro and a diced avacado, as well as 3 jalapenos instead of serranos. This was fantastic! We ate it with corn chips instead of on tostadas. Yum:)

Refried Bean Enchiladas

These are excellent - extremely easy but most importantly, very, very delicious! The sauce is authentic and overall this dish is great. I'm really excited to have found this recipe :) I added a few sprinkles of crushed red pepper flakes and several dashes of hot sauce to the filling to spice it up.

Salsa II

I find it odd that I'm only one of a few who has rated this below 5 stars! This just wasn't our cup of tea. It was too sour and mushy and not what I expect from homemade salsa. This tastes eerily similiar to jarred salsa (re: Pace Picante). Definately will not make this recipe again.

Hot and Spicy Baguette Sandwiches

I have had this recipe in my recipebox since August 2003! I've often wanted to try this, but when it came to planning meals, I'd always over look it. I finally gave it a shot this past weekend and it was great! After reading the other reviews, I decided to try this with shrimp, as the author suggested, instead of the crab meat. I sauted the cleaned, peeled and butterflied shrimp with cajun seasoning and then cut them half. I also used red onion instead of green and used just a bit less mayo. We also had ours on sourdough bread which was just delicious! This reminded me a lot of the artichoke bruschetta recipe on here.

Cajun Style Stuffed Peppers

I made this with brown rice and Gimme Lean vegetarian sausage. It was very good, but of course, I had to adjust the cooking time for the brown rice. As other's suggested, I added the shrimp after the rice was done so that they wouldn't over cook and get tough.

My Best Clam Chowder

Great recipe! This works very well using fat free milk with a splash of heavy cream. Because of the flour, it still gets very thick and creamy. I added extra potatoes and clams as others suggested. There are two of us in our household and we both love it! Even better with fresh sourdough bread & butter :)

French Chocolate Cake

Seconds after taking it out of the oven it began to fall. About 10 minutes later it had dropped about 1/2 way down the pan BUT it tasted great anyway! I made this for a dinner party & everyone loved it, I served it with mint chocolate chip ice cream
