Elk Shepherd's Pie

Wow, this recipe is fantastic!! I'm not a meat eater, to be honest, but I made this for friends and family becaue I was given several pounds of elk from a neighbor. I made some for myself, sans the elk, and I was amazed at how delicious parsnips are. I followed the recipe to a T for everyone and they raved about the elk version. I felt especially proud that I can still cook a "meat" dish that tastes delicious. Thanks for the fabulous recipe!!

Salmon Hash With Potatoes & Dill

Really fantastic, I wish I'd taken a picture! It was so, so good, I served it with buttermilk mashed potatoes with green onions and it was great. I broiled my salmon filet with some olive oil, dried oregano, salt & pepper and then when it was done I flaked it with a fork into bite size pieces.

Grilled Marinated Shrimp

Wonderful!! So, so, so good!! The BEST shrimp I think I've ever had! I broiled them and substituted ketchup because I didn't have tomato paste. I will definately make this again!! :)

Crustless Spinach Quiche

yummy! I added frozen artichoke hearts and topped with asparagus spears in a silly design. Very delicious and extremely easy! I made this again recently and used less spinach (fresh) and sauted it with a finely chopped, fire roasted poblano chile and lots of garlic powder. As well as about a 1/4 c. of heavy cream and an extra egg. This was excellent!

Yummy, very oniony, not as close to "normal" gravy as I expected, but it was still nice. My guests really enjoyed it - much more than I did. I will continue searching for a better veg gravy.

Downeast Maine Pumpkin Bread

Well, this was very good - although I didn't use oil, I did follow all other ingredients and baking instructions and it turned out lovely. I used apple juice instead of oil because I was out of oil and the apple sauce had gone bad. I used 1/3 less juice than oil (I was figuring oil is thicker than juice, so probably less juice would be required). While I don't necessarily recommend doing this, in a pinch, if you have everything else, as I did, then it's worth a shot. I put lots of real butter and it was rich and delicious!

Pesto Cream Cheese Spread

This was OK, really didn't work out that well. Even after 24 hours in the fridge the pesto did not firm up and so it didn't look right. The flavors were not a great mix, but maybe that's just personal taste.

Super Bowl Bites

These were great! I made them lastnight for Monday night football. I used Morning Star "soy crumbles" instead of beef. I had two people who aren't vegetarians and they both loved these. I thought they were delicious, too and I will make these again.

Chicken Cordon Bleu II

I made this for my neighbors and they said it was good. I did not try it because I don't eat meat, but it smelled delicious. I substituted half & half. I have to say that 6 tablespoons of butter was too much, the chicken seemed to be poaching in butter and the sauce was extremely oily looking when it was prepared. I should have poured off most of the grease, but I didn't, so I ended up trying to blot the big greasy areas with paper towels. Smelled wonderful, tasted "good" to my neighbors and looked very greasy that's why I gave it 4 stars.

Thai Spiced Barbecue Shrimp

This is delicious, I made this for a 4th of July party and nearly everyone loved it and two people asked for the recipe. I didn't have curry paste so I used powder mixed with olive oil... it may not be exactly as it should have been, but it was delicious!
