Best Fried Green Tomatoes

OMG, these are fantastic!! I made these using some unripe Roma's in my garden and we used crushed saltine's instead of cornmeal. They were really, truly OUT OF THIS WORLD! We made a little relish I guess you could call it of diced ripe tomatoes and orange bellpepper with finely diced jalapeno and a splash of cider vinegar with salt. It was an addictive combination.

The Best Clam Sauce

This recipe is pretty good, but not great. I think it needed a lot more wine for more flavor. Half the butter and lots of fresh chopped parsley would make it a lot better. Next time I'll try a different recipe.

Wow, these are great and I only used 1 c. chopped walnuts. I accidentally didn't buy enough walnuts but 1 c. seemed to be a good amount anyway. Delicious!

Easiest Peanut Butter Fudge

I made changes per other reviews - I used 2 c. brown sugar, 3 c. powdered sugar and 1 c. peanut butter. Super, super sweet but very, very good!

Simple Scones

These are insanely delicious!! This was the first time I've made scones and they taste better than the ones at Starbucks! I added 2 palmfuls of dried cranberries and the zest of 1/2 a lemon. Instead of grating the butter, I cut it into small pieces. I added all the dry ingredients to my food processor then added the butter and pulsed a few times. Then added the sour cream and egg mixture and pulsed a few more times until it formed a lumpy dough. I added the cranberries after I removed the dough from the processor but I'm going to try pulsing them with the dry ingredients next time.

Mini Cheesecakes III

This makes 6 regular muffin sized cheesecakes - incase anyone else wasn't clear on that. OMG these are soo good! I tripled the recipe to make 18 but followed the directions to a T with out making any changes. These are fabulous!!

Pretty good! Very close to Taco Bell's quesadilla sauce! I made it lastnight but didn't end up making quesadillas so I'll see tonight if the flavor develops overnight.

Jalapeno Popper Spread

I wanted to serve this as a cold dip because it's too hot up here to turn on the oven. But because I didn't bake it, I think that prevented the jalapeno flavor from getting into all that cream cheese. I also used sour cream in place of the mayo. To make it give it more flavor I added 1/4 c. jalapeno juice from the jar and twice as much jalapeno and left out the cheese. Before I made the adjustments no one was interested, but after I mixed it up the spread/dip was thinner & easier to eat with corn chips and people seemed to eat a lot more of it.

Orzo with Parmesan and Basil

Eew, not good :( I love to cook, read my othe reviews, I'm pretty easy to please, but my mouth did not agree with this one. It was oily and I didn't like the texture after I added the cheese, it seemed like it either needed a lot more, or I shouldn't have added it to begin with. And definitely not worth the $1.99 for the fresh bunch of basil!

Homemade Black Bean Veggie Burgers

These are delicious!! I used Sirachi for the hot sauce and all I had was Italian breadcrumbs, but I couldn't taste the herbs over the chili, cumin & garlic. Super easy and much better than a plain old Boca burger!

Lemon Garlic Tilapia

This was pretty good. It needed more salt + 30 minutes at 375° was too long and the fish was overcooked. I subtituted a bit of olive oil for the butter and added some zest as well as juice from the lemon. I will make this again, but with changes because it's an inexpensive meal that is healthy & quick to make.

Greek Pasta with Tomatoes and White Beans

This is a 5 star recipe without a doubt. It was inexpensive, healthy, fast & delicious! I substituted about 1 lb. fresh romas with 1/2 teaspoon of dried basil. I also used garlic & herb feta. This was so good, I ate the left overs for lunch today. I was concerned about not adding any salt, but with the feta, it balanced really well.

Tortillas II

I probably messed this up since everyone else seems to love these. I used King Arthur's white whole wheat flour. I halfed the recipe but wasn't able to make 6 tortillas, I made 2 that were about 10". Didn't taste good to me, but I'd like to try them again with regular white flour and maybe use a cast iron skillet instead of nonstick.
