About this Cook
I live in a rural county. I love to cook and bake. My husband and I are empty nesters now. My stepsons are in college. Cooking for the 2 of us can be a challenge but I don't like to eat out alot.
My favorite things to cook
Cookies are my favorite. I usually only do this at Christmas time now. We don't eat a lot of sweets so it sort of makes it special. I like to come up with new things for dinner but don't really have a favorite.
My favorite family cooking traditions
I made some baklava last year for Christmas & it went really well so I'd like to keep that as a tradition. Cookies are always a tradition with me but I do it by myself. My uncle can't wait for Christmas because I always send my signature oatmeal cookies to him.
My cooking triumphs
Oatmeal cookies, Shrimp Alfredo, Enchiladas, Walnut pillows.
My cooking tragedies
Bread though I'm determined to master that.

Black Bean Hummus
I really liked this and so did my co-workers! I made a couple of changes. I used peanut butter instead of the tahini because it was what I had on hand. I only used 1/8 teaspoon of cayenne pepper, we don't like it that hot. To us it had just the right bite! Thanks for a great recipe and healthy too! No oil!

Spaghetti Squash I
This was my first time making spaghetti squash. This was super easy. I didn't have any olives. I used a can of diced tomatoes with garlic and basil. No fresh basil so I used dried. I liked the texture, the squash was sort of crunchy. I think this would be good with some shrimp. Great recipe!

Spaghetti Salad II
This was great. I get a lot of compliments when I make this. Next time I might add some zucchini.My fave dressing is Wishbone Italian. I omitted the red onion as I just don't like them but I added a little vidalia onion, finely choppped. Our local grocery store makes a really good spaghetti salad and this is very close.
