About this Cook
I live in a rural county. I love to cook and bake. My husband and I are empty nesters now. My stepsons are in college. Cooking for the 2 of us can be a challenge but I don't like to eat out alot.
My favorite things to cook
Cookies are my favorite. I usually only do this at Christmas time now. We don't eat a lot of sweets so it sort of makes it special. I like to come up with new things for dinner but don't really have a favorite.
My favorite family cooking traditions
I made some baklava last year for Christmas & it went really well so I'd like to keep that as a tradition. Cookies are always a tradition with me but I do it by myself. My uncle can't wait for Christmas because I always send my signature oatmeal cookies to him.
My cooking triumphs
Oatmeal cookies, Shrimp Alfredo, Enchiladas, Walnut pillows.
My cooking tragedies
Bread though I'm determined to master that. I love to get recipes off the net. If my husband doesn't take seconds he didn't like the recipe. If they don't turn out I just throw the recipe away.

Spaghetti Squash I
This was my first time making spaghetti squash. This was super easy. I didn't have any olives. I used a can of diced tomatoes with garlic and basil. No fresh basil so I used dried. I liked the texture, the squash was sort of crunchy. I think this would be good with some shrimp. Great recipe!

Spaghetti Salad II
This was great. I get a lot of compliments when I make this. Next time I might add some zucchini.My fave dressing is Wishbone Italian. I omitted the red onion as I just don't like them but I added a little vidalia onion, finely choppped. Our local grocery store makes a really good spaghetti salad and this is very close.

Grilled Pork Tenderloins
This was delicious! I didn't have any terryaki sauce but I don't think you'd really need it. We invited neighbors for dinner and they just loved it. I sent a copy of the recipe home with them. They said they had never had pork loin before & were defiantly going to make this. Thanks for a great recipe.
