Carrot Cake III
I followed the consolidated advice (used nutmeg, crushed pineapple, extra cinammon/vanilla), and it turned out extremely moist. But it tastes pretty much like any other carrot cake. The amount of icing is waaaay too much for this recipe, it should be about a quarter of the amount called for. I put most of the icing into a container and put it in the freezer for next time.

Peppered Shrimp Alfredo
One of the top dishes I've ever made, and I've made hundreds. Followed the recipe exactly, except I used whole milk instead of cream. Turned out incredibly delicious.

Egg Salad Sandwiches
Too salty, and way too much for only four sandwiches. Can easily make twice as many. If you're stuck with leftovers, you can boil some potatoes, mash them, and then make a nice potato salad with it.
