This was good! I was afraid it would be bitter or overly "greens" tasting, but it wasn't. A nice way to use up some greens I got in my produce delivery.

Red Chard and Caramelized Onions

I'm not a big fan of chard, but it came in our produce delivery. This was good--even my almost 3-year old son ate it. We didn't have olives or capers (and don't care that much for them anyway) so just left those out.

Spam on the Go

I can now fairly say that I don't like Spam. It was so salty. Other than that, I liked it. I also tried this with some garlic & Gruyere sausage instead of Spam, and balsamic dressing instead of soy sauce and sesame oil, with some chopped summer squash added in, and that was really good.

Mint Juleps

It was our first real (aka alcoholic) mint julep, and this definitely is meant for someone with way more alcohol tolerance than me and my husband. We ended up mixing 1 oz. bourbon with 1 oz. syrup over ice, and then we liked it. I'm sure we'll make it again as we have lots of mint growing out back, and summer's just begun!

Toasted Pumpkin Seeds with Sugar and Spice

Yummy! Instead of baking the seeds and then cooking them in the pan, I just coated and baked the seeds. I only used 5 T. of sugar. They were great!

Lemon Bread

At first I was a bit disappointed because, while the glaze was very lemony, the bread itself wasn't that lemony. But on the second and third day, it grew on me. I too traded poppy seeds for nuts. I made one with all purpose flour and white sugar, as the directions said, and one with whole wheat flour and brown sugar, just to see how it would come out. I gave the white one away and kept the brown for myself. The brown one rose more than the white one. I think 60 minutes is too long. Even cooking 2 loaves at once, the edges of the white loaf, which was in a metal pan, seemed a bit burnt. The brown loaf was cooked in a glass pan and did not burn. Both of them came apart a tiny bit when I took them out of the pan.

Peppermint Brittle

I mistakenly made my first batch with only 1 pound of chocolate, but we ended up liking that better. The batch with 2 pounds of chocolate didn't have enough peppermint taste for us. I will definitely make this again using half the chocolate. It's super easy and yummy!

Grasshopper Cream Cheese Pie

I switched the amounts of cacao and mint (using mint flavoring rather than creme de menthe), and I made my own crust, and it came out very good.
