Cajun Appetizer Meatballs
I made these for a party and they were a big hit! After reading some of the previous reviews about them being too salty, I used Mrs Dash Southwest Chipotle Seasoning Blend which has no salt and they turned out great. To make them a little more fancy looking for the party I made them into little kebabs with a meatball, homemade crouton and cube of montery jack cheese on each. Everyone loved them!

Penne with Spicy Vodka Tomato Cream Sauce
I've made this recipe so many times I've lost count! This is one of the few recipes where I don't make any changes. It's great as is, super easy and impressive enough to serve to guests. Serve it with some freshly ground parmesan cheese and a nice crusty baguette. Leftovers are great too!

Spinach Brownies
I made these tonight for some friends and they were a big hit! I made several changes based on the reviews here. -I used baby spinach, sautéed not boiled. -I sautéed the onion and added garlic as well. -I used 1/4 cup butter and slightly less milk. -I added sautéed cremini mushrooms and crumbled bacon (I used the ready crisp real bacon bits) as well as lots of freshly ground black pepper. I served them with marinara sauce for dipping. My husband described these as a cross between quiche and pizza. Next time I will use an Italian cheese blend instead of just mozzarella for a bit more intensity. I will be making these again I just wish I could come up with a better name!
