Zucchini Patties
I followed the recipe because I'm a firm believer in not tweaking it until after I've made it once. I measured and did not eyeball any of the ingredients and had to add extra eggs to get everything incorporated. I urge everyone to make one pattie, taste it then adjust for salt and consider adding pepper as they are on the bland side. My mother made something similar and I lost her recipe over the years and this one is the closest to hers. They were a big hit as a side dish and there wasn't one left and I doubled the recipe. All in all it's a 5 star recipe.
