Spicy Black Bean Empanadas
These were delicious, but in an effort to prepare ahead, I made these several hours before my dinner party. By the time they were ready to be served, the puff pastry had fallen a little and was greasy. Next time I'll try rolling it a little thicker, and baking them at the last minute.

Avocado, Tomato and Mango Salsa
Excellent! I served this with pork empanadas as an appetizer and it was a perfect contrast of sweet and savory. There was a little leftover the next day and it was great with tortilla chips as well!

Southwestern Roasted Corn Salad
Excellent! The combination of ingredients was perfect. I added a little chile pepper for added spice.
