About this Cook
We are an athletic family of distance runners living in the mountains at an elevation of 8400 ft. One of us runs at the collegiate level and another runs for high school, but we all enjoy distance running personally as well as cheering on other runners. Because we live at a pretty high altitude, for all baking I only use one fourth of the amount of baking powder or baking soda called for in a recipe plus I have to cut back on fat and sugar in most recipes just to make things work. Since we like to eat healthier anyway, this isn't a problem especially once I figured out how ingredients function at altitude. We are fortunate to live in such a beautiful place. Since we live a long way from grocery stores and restaurants, a well stocked pantry is a must to eat well.
My favorite things to cook
Baked or grilled salmon, seafood, pasta, yeast breads, soups, and Italian foods are all favorites here. I love cake and cheesecake, but I don't make them too often.

Honey Roasted Red Potatoes
This is a nice, slightly sweet side dish. It works with russet or red potatoes, and I usually cut them in quarter inch slices to speed up the cooking time a little.

Simmered Sirloin with Noodles
Easy comfort food, but the recipe needs more flavor. I added red wine, parsley and ground black pepper to the simmer stage, but it still needs something more. I adjusted the flavor at the end with a little Tamari sauce but it still needs more flavor...perhaps more red wine and garlic?

Broccoli Beef I
A simple stir fry recipe that tastes great. I add a little black pepper and a sliced onion when stir frying the beef, double the ginger (powder) and garlic, and usually reduce the sugar by about 1/3. I've been making this for over two years because it is quick and good.
