Couscous Feta Salad

I LOVED this, but my husband wasn't so crazy about the dressing. I really can't see why. We both generally don't like mustard, but this was a perfect use of it. I would make it again maybe for other people, but apparently not for home!

Great, easy breakfast recipe when there's no milk in the house! Make sure to use less than 1/4 cup batter. When I used an exact 1/4 cup, or a scant 1/4 cup, it was still pretty gooey in the middle and that was after making sure that it was a darker golden brown all around. On the second try, I used maybe a little more than 1/8 cup and it was perfect. And I did make sure the oil was exactly 350 degrees with my candy/deep fryer thermometer. You could even make just a tbsp. at a time for little bite-size "doughnuts." mmmm. Yummy!

Easy Apple Crisp

I will definitely make this again but as one reviewer said with rolled oats. If you make the recipe as is, it's too "floury." It needs at least half as much flour and more sugar in the topping. With that, I think it would make 5 stars.

Spinach Stuffed Chicken Breasts

I went with what one review said and baked the chicken at 400 degrees; 15 min covered, 20 min uncovered, and 5 min on broil. The bacon was still a bit soggy (I would have liked it to be crispy) and the chicken was very dry. I'll cook the bacon separately next time. The filling for this is fantastic and I did add some chopped onions...delicious!

Marshmallow Fondant

I used this to make little colored leaves to top the cupcakes for my wedding. People actually ate them! Which is a testament to good fondant. I also snacked on it as I made the leaves... This was time-consuming to make, but worth it as it does keep for even a couple months in the fridge.

Cream Cheese Frosting II

Just like my grandma makes! Perfect cream cheese frosting every time. Tip: If you want to use this to frost cupcakes bakery-style, add lots more powdered sugar until it's more stiff so that it can set. Otherwise, it will look droopy on your cupcakes. To balance out the sweetness, add a pinch of salt as you mix in the extra powdered sugar.

I made this without the lemon icing (I made them for my wedding with cream cheese frosting just so all cupcakes would match). PERFECT lemon cupcakes! If I ever make them again I would use the icing in the recipe.

Slow-Cooker Chicken Tortilla Soup

Don't use store-bought tortilla chips! It really is very easy to just bake corn tortillas as in the recipe and the taste difference is incredible. I used baked tortillas for dinner, then for lunch the next day I was in a hurry and packed tortilla chips. Big difference. Don't be lazy if you have time! Also, this recipe was a little spicy for me, but I'm sensitive. So if you're sensitive, you may want to make it a bit less spicy. I could still handle it though; it was so good I couldn't stop slurping it down!!

Basic Fondue

I can't imagine eating this with milk. I used the same amount of beer, which came out to about one and a half bottles of beer. I just used some cheap Michelob Ultra (leftover from our wedding lol), and it tasted perfect. Huge hit at work. Also, I didn't use a saucepan. I just did everything in the fondue pot. No need for that extra step.

Pumpkin Pie Squares

I doubled everything like reviewers had suggested, and when I began layering the crust into the bottom of the pan, I found that I had made WAY too much. If anything, just increase the crust ingredients one and a half times. I ended up using the rest in a 9x9 dish (including the extra pumpkin mix). This is a fantastic recipe. Way better than the pumpkin pie that was also brought to Thanksgiving! The seasoning is perfect in this recipe.
