Broccoli, Rice, Cheese, and Chicken Casserole

Reviewed: Mar. 6, 2006
5 Stars because it is super easy, super quick, super yummy, and all 4 kids LOVED it, even my green-aversion kid who doesn't eat veggies. To make it even faster and easier, I used a rotisserie chicken from my grocery store and just pulled that off the bone, did not pre-cook the rice (instead put it in the casserole dry and added one can of low-sodium chicken broth to the mix), and used 1 package of shredded velveeta and 1 package of shredded sharp cheddar. A few grinds of the pepper mill, a loaf of garlic bread and a tossed salad...dinner was complete. Great meal for a busy mom. Thanks for sharing.

Orzo with Mushrooms and Walnuts

Great texture, makes an ample amount...but very bland in taste. It was very edible, but just not memorable or something that we will make again.

Terry's Texas Pinto Beans

Reviewed: Feb. 7, 2006
Well, I'm a native Texan and have been making pinto beans for years and years and years and thought I would try something new. Well, my grandma's recipe (which uses tomatoes, bacon, etc.) may have to go on the back burner for awhile because these were fantastic and loved by the entire crowd. I cooked them for several hours until they were nice and tender and followed the recipe exactly using the green salsa. This one is definitely a keeper.

Spicy Southwestern Slaw

Reviewed: Feb. 7, 2006
Yummy, yummy, yummy. We used it as a topping for pork tacos to great success on Super Bowl Sunday. We will definitely be making this one again. The only change I will make is to cut back a bit on the oil...it was a tad to oily for our tastes...but other than that...FANTASTIC!

Homemade Wonderful Bread

Reviewed: Feb. 7, 2006
I can't get over the rave reviews. This was average at best. I've had similar tasting breads out of box of bread machine mix from the store. It ended up very dense. The bread was just a big lump in the machine and never rose well. I know the yeast was working though because it was bubbly and foamy when the mixture was added to the machine...so I'm at a loss...

Killer Cheesecake

Reviewed: Feb. 7, 2006
This was foolproof and wonderful. The entire family loved it. It is very similar to an old family recipe from my great great aunt, but that one retires using a hand beater for 20 minutes...the food processor sure cuts that time down! The second time I made this, I made it completely sugar-free (with Splenda) and low fat for my diabetic mother. It was still very tasty. Thanks for sharing.

Dee's Roast Pork for Tacos

Reviewed: Feb. 7, 2006
I wish there was a 10 star option! The most delicious recipe we have ever tried off this site. This was the hit of our Super Bowl party. Topped the tacos with Southwestern Slaw and made pinto beans. I followed recipe to a tee. The only thing that I had to adjust was cooking time. My 4 pound roast (bone in) took almost 7 hours to be fork tender and fall off the bone. It was worth the wait though! We just ate towards the end of the game instead of half time. The kids and adults couldn't stop raving about how good this was. This is a keeper and one that I will make next time we have a crowd over. THANKS!

Peanut Noodles

I love nutty asian food, but this came out gummy and heavy. I ended up adding a lot of extra liquid to thin it down some. I may experiment with it, because the flavor combination wasn't bad...just the consistency that turned us off.

Baked Ziti I

Reviewed: Jan. 31, 2006
If I could give it six stars, I would. Oh my gosh! I happened upon this recipe one day while browsing around the allstar recipes and saved this one to my box. So glad I did. It was different than my regular baked ziti casserole and I thought I would give it whirl. Yummy, yummy, yummy. All four kids loved it, hubby had 3 helpings and I went back for seconds myself! Made exactly as stated except for throwing in a couple of cloves of garlic with the meat (couldn't help myself!) and used 8oz. of mozarella instead of 6oz since that is how my grocery store sells it. We will trash our old ziti recipe and switch to this one. At first, I thought the sour cream would be a wierd ingredient, but it added just the right kick. This will become a staple at our house. And the best part? Easy, easy, easy and fast, fast, fast for a busy mom!

Very good. I may have to switch to this recipe from now on. I made a double batch for the holidays and it was gobbled up. A great chocolate flavor and easy as well.

A good stand-by for the holidays. We grew up calling it white trash. Very easy to make and customize to your individual tastes. We threw in a couple of handfuls of mini marshmallows...totally yummy.

Meatloaf California

Reviewed: Jan. 31, 2006
Sorry. Have to disagree with a lot of reviewers. This was overspiced and way too sweet for us. We live in Tex Mex country and love our spice, but this entire blend of dried herbs thrown in was too overpowering. We will stick with our tried and true recipe that is more tomato and onion based.

Buffalo Chicken Dip

Reviewed: Jan. 31, 2006
Very good. Satisfies that craving for hot, spicy chicken wings without the mess. Like others have recommended, I totally omitted the cheddar cheese and substituted bleu cheese dressing for the Ranch. I used a pre-cooked rotisserie chicken from the grocery store and also lightly sauteed about a cup of finely chopped celery before throwing in the chicken and hot sauce. Made for a very hearty dip which the family and guests loved. Went over much better with Tostitos scoops than with the celery sticks...but was definitely a hit.

These were okay. Nothing special. I think I like them the way I normally do them just throwing in various spices like garlic, pepper, and especially rosemary.

Bolognese Stuffed Bell Peppers

Yummy, yummy, yummy. Very good Bolognese sauce. I doubled the sauce and used double orzo instead of rice...and had lots left over to go around the sides of the peppers in the casserold which is the way we always like it. May make the sauce as a stand alone one night with pasta. Great recipe.

Very good. But like other reviewers, ours was also too salty. I will make some changes next time I make this. Never would have thought Sprite would make a good add-in, but it was great.

Smothered Potatoes

Unbelievably tasty and easy. I used Steak Seasoning in place of salt/pepper and extra onion. The whole family chowed down on them. I have made something similar to this with frozen french fries, but this was much better and much cheaper. Thanks!

Tangy Tenderloin

Reviewed: Jan. 10, 2006
AWESOME! Though, I am not sure how close my finished product was to the intended recipe. I had to use what I had on hand in the pantry. I used light Catalina salad dressing, omitted the honey, and threw in about 2 T. of dijon mustard for a kick. I also only cooked it about an hour because I was afraid of it drying out. It was absolutely DELICIOUS and loved by the entire family. They all said this was a definite keeper and to "PLEASE make it again mom." Thanks for the great idea...plus...it was EASY, EASY, EASY! A huge bonus for a mom of 4!
