Very tasty recipe!! So rich and creamy. Loved it..takes a little time but worth every minute. The recipe makes a HUGE amount so if you are serving only a couple of people, cut it in half or forths!

Awesome nachos!! This recipe was very easy to make and tasted really good. It could have used a little more "zing" and I see other posters used jalepeno peppers. I will try this next time. Also thought hot or medium salsa would work too. I like the idea of black beans also. Will certainly make again! Thanks for sharing!

VERY tasty!! And didn't take very long to make. Just time to "set" the coconut mixture onto the shrimp. I followed someones suggestion to put them in the freezer for 15 minutes and the coconut stayed on very well. I also pan fried them in olive oil. Will definately make again. Thanks.
