Baja Bean Salad
Very good and light tasting. I suggest leaving off the lettuce, or tossing it into the bean mixture right before serving.

Best Guacamole
I really like how light this is. It has a great "avacado and not much else taste." It is a tad lemony. I would suggest using the juice of a quarter of a lemon. I also only used half the oil.

Fresh Peach Pie I
This is a great way to use fresh peaches. My husband complains when I cook peaches for anything, pie, cobbler, etc. He loved this pie. I pureed some of my "less pretty" peaches for the glaze. That left the more sound ones for attractive slices in the pie. I also had extra glaze, so I bulked it up and made a second pie. Delicious!
