Single Mom of a teenage Daughter. Caring for my elderly , disabled Mom. Love dogs, have 3 and 2 cats. I am really starting to enjoy cooking. Feel like a beginner for being older than dirt!!! LOL
My favorite things to cook
Southern, Comfort, Mexican, Asian, and experimenting with different tastes. Want to get into baking during the winter (way to hot here in the summer)
My favorite family cooking traditions
I come from a family of great southern cooks and bakers. My Daughter is an exellent cook as well, so we have fun in the kitchen, trying to "invent" our own recipes. It does get interesting at times, but always fun. To me that's what food and the kitchen are all about. The kitchen was always the place to be growing up.
My cooking triumphs
ummm....probably having enough pumpkin left after the tragedy to make pie for Thanksgiving!!!!
My cooking tragedies
Too many to list!!! One does stick out tho... After having baked the Halloween pumpkin for pumpkin pie...was pureeing it in the blender, tried to poke the pieces down farther (blender running) the blades caught the wooden spoon. Pumpkin was dripping off everything in the kitchen, including me!!! Duh moment there! :)

Key West Chicken
We loved the flavors here ! I used 4 bone in, skin on thighs and doubled the sauce. Baked in a foil lined pan in the toaster oven for about an hour. I marinated these for 5 hours, chicken was moist and very flavorful. Will marinate overnight next time and grill ! Thanks for a great recipe, Tina !!!

Dill Pickle Meatloaf
Very good and quite different from the 'standard' meatloaf. Only change was to use Kosher dills, all I had. Will make again and again ! Thanks for sharing !!!

Slow Cooker Salisbury Steak
Good, easy recipe ! Only change made was I used pre- made frozen meatballs, they were 'home style' so that could have been the problem. Taste was a little off, but still good. Will make again, using the patties, as stated. Thanks for sharing !
