Amaretto Cream Cake
I made this into cupcakes. I skipped the apricot filling. I used 3 cups of powdered sugar instead of the 4 the recipe called for in the icing. The icing wasn't as firm without the 4th cup, but the flavor was awesome! They were a big hit at the picnic.

Creamy Corn Pudding
This is somewhat quiche like. I enjoyed it. When I make it again I will add some salt and more cheese. Probably shredded cheddar or colby jack.

Frijoles a la Charra
I have been making this recipe for several years. It is my "go to" recipe when I make Mexican food of any kind. The only change I make is that I substitute a 14.5 ounce can of diced tomatoes instead of the fresh tomatoes. I always have canned tomatoes on hand, and I only really like fresh tomatoes in the summer when they are in season where I live. Also, I never soak my beans beforehand, and they always turn out great.
