About this Cook
I'm currently struggling with the urge to throw together a boxed dinner or cook up a frozen dinner simply due to the lack of time during the week. It's very difficult to make the right decision, but I'm trying. I want to provide the healthiest food I can in the time I'm given.
My favorite things to cook
Right now I love to try a little bit of everything, but I seem to be making more appetizers and snacks than anything. They're the easiest to pack around and get people to try at different social gatherings.
My favorite family cooking traditions
It seems that most of my family is able to take a recipe and really make it their own. It might serve as a foundation, but they take it and create an architectural masterpieces from it. I hope to be there some day.
My cooking triumphs
As far as I know I haven't made anyone sick yet - that's always good, right? =)
My cooking tragedies
I have never quite gotten over a bad, but honest, mistake I made in cooking class in middle school. We sent out invitations to favorite teachers, the assistant principal, and the principal himself. I was assigned to make blueberry pies for dessert. I was finally feeling comfortable in the kitchen and decided I had to double the recipe. Things went great while making them, but the look on our guests faces told me I'd messed up. I hadn't doubled the sugar! Those poor people tried to finish their slices anyway, and I loved them for it.

Christmas Breakfast Sausage Casserole
Recipe was definitely a good start, and then I followed other suggestions to finish it up. I used croutons instead of bread, and used half regular sausage and half spicy sausage. Now this is a family favorite!

Pollo Fajitas
Perfect! Definitely a keeper, this recipe is now a family favorite. I love to serve this with sliced avocado too, just adds an extra kick. Yum!

Hamburger Pie
This was a good, warm meal for a rainy day. I used canned corn and frozen peas instead of green beans, and used one can of condensed soup and one can of diced tomatoes. I just spread the mashed potatoes over the top, and switched the oven to broil for the last minute to kind of crisp them up. All in all, a good recipe to keep on hand!
