Scallops and Spinach over Pasta
This is wonderful! I used fresh spinach and added tomatoes and onions, sauteeing some garlic in the oil before adding the scallops. Really good, and pretty too!

Jollof Rice
A bit time-consuming, but definitely worth it. It has a very distinct taste (spicy!) and is perfect for a cozy winter meal. The chicken chunks make it really wonderful!
