Pineapple Bread Souffle

Strange recipe, but great tasting and easy to make. The texture is like a cross between a bread pudding and a soufflé. The flavor is sweet enough to be called a dessert but mild enough to be served as a side to a savory main dish. I will be adding this recipe to my list of favorites! Thanks for sharing.

Amy's Cilantro Cream Sauce

Creamy, spicy, and sinful! I served this sauce with the "Southwestern Egg Rolls" recipe from this site - the recipes really compliment each other. This recipe is thick like a dip rather than a sauce. Next time I might thin out the recipe into a sauce and use it as a taco topping or salad dressing.

Southwestern Egg Rolls

Delicious! I made a vegetarian version by omitting the chicken and doubling the veggies. The filling is so good that I am going to try it with enchiladas or soft tacos. I lightly pan fried the egg rolls and didn't miss the deep fry at all. As others suggested, I served with the "Amy's Cilantro Cream Sauce" recipe from this site - this sauce really compliments the egg rolls.

Penne with Asparagus and Mushrooms

REALLY GOOD and very easy recipe that tastes like more time was spent in the kitchen. The first time around I followed the recipe exactly and it was delicious. The second time around I liked it even more by cutting the oil to 1/4 cup and using 1/2 cup half & half and 1/2 cup low fat milk. Thanks for the recipe - I will be making it again!

Delicious naan recipe. I proofed the yeast before adding the other ingredients. I also added crushed garlic to the butter before grilling the naan. As other reviewers suggested, next time I'll add some baking soda to the dough to give the naan the bubbles I'm used to.

Speedy Homemade Salsa

My homemade salsa is good, but this salsa is great (and a little faster to make)! I used canned "fire roasted" tomatoes, which added a smoky flavor to the salsa. Yummy!

Curried Tuna Melt

I am a vegetarian but made this for my hubby who loves curry. He rated it 5 stars and described it as "tuna with a kick." That's about as descriptive as he gets. But he is hard to impress, so with a five star rating, it must be delish!

Mandarin Orange Cake I

I followed the directions exactly - the cake is moist and smells heavenly, but it is a little too dense for me. I prefer a lighter cake. But, I LOVE the frosting! I will likely make the frosting again with a different cake. Note that the recipe makes way more frosting than needed.

Honey-Balsamic Vinaigrette

Lemon Orzo Primavera

Mmmm - yummy, fast, and easy. I love the tangy flavor resulting from thyme, lemon, and garlic. I did as others recommended and added 2 Tbsp. lemon juice (in addition to zest), I used a little extra broth, and I added the veggies halfway through cooking. Thanks for sharing the recipe.

Cornbread Muffins I

I'm not a big cornbread fan but made this for my mom who is - and it was a great recipe! I used fresh corn shaved from the cob and baked in a 9 X 13 pan rather than making individual muffins. The baking time was approximately the same. Fresh out of the oven the cornbread was delicious, the perfect amount of sweetness. However, I only gave the recipe 4 stars as the next day the cornbread was crumbly and dry.
