Baked Scallops

So easy and so yummy! I didn't have parm so I used Assiago. Greqt easy meal.

Chile Pasta Salad

I thought this was a very good simple pasta salad recipe. Just to spice it up a bit, I added chopped parsley and fresh squeezed lemon juice. Otherwise, you can pretty much add WHATEVER you want and it will still taste good!

Cream of Pumpkin Soup

Good but needed a little 'umph'. I added a pureed yam, some thyme,a T. of curry. Also, half of the wheat croutons I pureed into soup. For those that like a kick, a dash of cayene at the end.
