Tomato and Basil Quiche
Wow, this was so good. My fiance loved it too. I had to cook it longer than the recipe called for, and I chopped the tomatoes instead of slicing them. I will be making this again for sure!

Eggplant Casserole
I enjoyed this a lot. I added mozzarella cheese to the top, as well as oregano and basil. I also used Italian bread crumbs instead of regular. I think next time I will mix the cheese into the ingredients to make it even cheesier. It would also be nice with mushrooms and broccoli added.

Easy Turkey Tetrazzini
It was ok. The cream of celery soup kind of overpowered the dish taste wise. But, the fiancee enjoyed it, so that it a big plus.
