Easy Baked Oatmeal

Easy to make. Love the no flour. Very flexible as to type and amount of sweetening. AND.. best of all...makes oatmeal a do-able breakfast for me because a regular bowl of oatmeal leaves me hungry all day. This has very good flavor and texture and doesn't leave me looking for the next thing to eat all day long. I followed some of the suggestions ie; adding apple sauce, cloves, cinnamon, and kept in the vanilla from the original recipe. The whole family enjoyed it for breakfast this morning.

Scalloped Corn

My mom has new dentures and it's not going so well. I have been looking for recipes that are visually appealing, easy to chew and tasty. This completely met my goals. She says it is fabulous. And it's not safe for either of us to be alone in the room with the baking dish full.. it's a little too good! :) We'll be rotating this thru our menus regularly now. Thank you for posting this recipe.

Green Chili Rice Casserole

Super easy to prepare. The finickiest eater in the house had a second serving at dinner and took some home for the next day. Everyone else enjoyed it as well. It was very popular at dinner last night. I used garlic salt instead of plain salt and added some black pepper. Now that I've eaten it, I think the previous reviewers additions would be really delicious too. :) Thanks for posting such an easy adn super crowd pleasing dish.

Caramel Macchiato Cheesecake

OH MY GOOOODNESS YES! First.. I thought I was only a true lover of the dense new york style which this really isn't and second.. we used a brand new springform and didn't know til I was putting it into the fridge to chill that the fit of bottom to sides was imperfect and so.. water would have gotten in.. and it did. .a little .. most of my crust was imperfect but not inedible.. AND STILL this is a 5 STAR cheesecake. MAKE THIS CHEESECAKE!! While eating it we were figuring out the next event where it will be a must on the menu!! My mother in law was saying this will be a must have at every holiday. Seriously.. this is Oh My G** good!! I will cut back a little on the sugar next round to see if I prefer it a little less sweet.. but that's it. Thank you bunches for posting this wonderful recipe.

Ricotta Gnocchi

I didn't make the sauce only the gnocchi. It was my first ever try with gnocchi. and WOW!! DELICIOUS!! No wonder other reviewers are making it again so quickly. It really is that good!! So very glad you posted this recipe.

Pirates' Pork Chops

I suppose this showed me just how much of a sweet tooth my dinner eaters have.. And.. they LOVED this dish. They RAVED in glowing terms and ate and gave thanks and ate and spoke appreciatively and ate :) really.. they loved this. I served it with some jamaican rice that was snazzed up with some coconut and something green on the side. They loved me more after this dinner ;)

Easy Deviled Chicken

Read the reviews and here's what I did: Really didn't measure, but for the four chicken breasts I had on hand here's what I did... Mostly (plain)yogurt with a little mayo and a little melted butter and a Generous amount of dijon's garden harvest mustard and a good teaspoon of dry mustard powder to give umph to the flavor.. from there I used salt n pepper on the chicken before coating in the above mix and then in italian breadcrumbs. I baked them in a 400* oven on a foil lined sheet lightly sprayed with non-stick spray .. with foil on top for twenty minutes and foil removed for the last twenty. They came up to temp. resting before I cut them. EASY and fast to assemble and BIG POSITIVE reviews at my dinner table. :) This will be a standby recipe! Thank you for posting.

Oven Fried Chicken II

This was enjoyed by everyone at the dinner table tonight. Rather than using the oil I lined a pan with foil and sprayed the an olive oil spray on it to cut down on sticking. I also sprayed it over the chicken before baking. Half way through I added some butter to the pan. We were pleased with the crunchy outsides and moist tender insides. I did, as suggested in other reviews, add some more seasoning. I added mine to the flour. And now as I am typing, I think it might be nice to add some finely grated Parmesan to the bread crumbs next time. But perhaps baking Parmesan for an hour would be too long. Thank you for posting.. this was close enough to fried for us for most of the time.

Strawberry Oat Muffins

I was searching for an oatmeal and buttermilk muffin recipe. I didn't have any strawberries on hand, but I did have soft-dried apricots and blueberries, dried sweet ginger, dried pineapple core slices and walnuts ( I chopped all of that up ).. and to all this I added a bit of strawberry extract, cinnamon and a conservative handful of semi-sweet chocolate chips. This is a GREAT base recipe for muffins and I cannot wait to make it with fresh strawberries. As someonelse said.. not too sweet .. just right. TY for posting! I'll be using this recipe over and over and over again.

Chicken Costa Brava

Following what I read in the reviews before me; I tripled the seasonings and because I like it very much..added smoked paprika. This recipe really is a make-the-day-before dish... and the reward is that it IS quite good the next day. :) Thanks for posting..

Caribbean Turkey Burgers

really delicious. I did double the seasonings and should not have increased the bread crumbs ( I used corn flake crumbs ). The increased spices seemed too much until the burgers were all put together and then allll perfect. And up-ing the dry ingredients gave me patties that didn't hold together quite well enough on the grill. This is A KEEPER recipe and is just as good the next day as it was for dinner the night before. Thank you very much for posting it! oh,..and I used the Worchestershire sauce that says it's for chicken.

Quick Sunshine Cake

This is a lovely cake and one that I am proud to have made. :-) I can see why it was suggested as a good cake for a baby shower.. the frosting is soooo heavenly. I did make my frosting with real whipping cream as I don't care for cool whip whipped topping... and I didn't add any sugar just the pudding mix and the pineapple with it's juice and it was plenty sweet. I too found that the cake refrigerates well.. it's quite tasty today.. the day after the party. Mine was not dry at all, but I kept a very careful eye on it and did not rely only on the timer to know it was done. Oh and I was feeling anxious as I was putting all the pineapple and the juice into the bowl with my whipped cream til I realized that the pudding mix would absorb the juice just fine and that the recommendation to make the frosting and refrigerate it for awhile to let it set up was a very good idea. So, I did that and frosted the cake just before serving it. It was a big hit. I know that I can make this cake anytime and my family and friends will happily eat it up. Thank you for posting the recipe.

Korean BBQ Chicken Marinade

This was really excellent. It's a keeper at our house. My honey cooked the chicken breast chunks that I'd frozen right in the marinade in a big pan with all the marinade and then added dried cherries and zucchini chunks and big onion slices.. sounds a bit odd but was WOW-Great over good white rice.

Curried Chicken with Mango Rice

Very Nice. Well received dinner at my table. I too saute'd onions and garlic ( left out the ginger because my curry already had sufficient heat ) and browned the chicken. This was excellent with a vegie melange side dish that included green peas and some apples for sweetness to offset the heat of my balti curry powder. The mango was a great addition to the rice. We will have this again .. and it makes a great lunch the next day.

Hot Tomato Grits

I Loved these grits!! Would love to always have a bowl of them in the frige ready to reheat. Sadly, my bag of grits was not as fresh as I thought they were and so my batch was benefitted by a dollop of sour cream on the top and some roasted garlic stirred in. But with fresh grits I don't imagine they'd need the extras at all. Yummmy!!

Mommy's Sweet Carrot Milk

DELICIOUS and PRETTY :) I would serve this to anyone who I know enjoys indian food. I liked it warm as well as chilled.. even over ice. Cold was refreshing and both temps. were comforting. So glad you posted this recipe. We'll be enjoying it regularly at least throughout spring and summer.

Chicken Enchiladas V

Wow... what a success. I thought they were okay and every person who ate them RAVED! My friend, a chicken enchilada connoisseur, said they were the best she'd ever had and I didn't think they could get any better than the ones SHE makes. :) Repeats are requested. These were at least a five-star success. BTW..we froze a pan before baking.. they turned out great too.

Mincemeat Quick Bread

Very Good and Very Easy. Makes the most of mince meat. Followed recipe plus added a couple TBL.s of cocoa pdr. I think it would have tasted just as good w/o the cocoa. Will make again. Would make wonderful small loaves for holiday gifting. Realllly good.. add a hot cuppa coffee or tea..and you're set. :) Thank you for posting this recipe.
