Rather than use 1 cup water and 1 cup oil we used 1 cup soy milk, 3/4 cups unsweetened apple sauce and 1/4 cup veggie oil. Lined the pan with parchment paper and they popped right out of the pan wonderfully. We are not Vegan at my house but we all enjoyed them. We made a batch for some Vegan friends of ours and they loved them too. Good recipe, would recommend it with those amendments for sure =)
