Monte Cristo Sandwich

This was soooo good. This is like a turkey/ham melt, but dipped in egg. Mine did come out soggy, but I think I had too much grease in the pan before frying. And next time I won't add so much milk to the egg or add more egg to the milk, since the egg is what gives it that nice crunch. I felt the milk contributed to some of the sogginess. I also added a tomato. Thanks for a great recipe to use leftovers in an unexpected way!

Fried Mozzarella Cheese Sticks

These were delish! I took advice from other reviewers and just mixed the flour and cornstarch in with the breadcrumbs and did a double coating. I will try freezing the cheese before using next time as others suggested to keep the cheese from oozing, which mine did but was still a hit! Thanks for this fab recipe!

Super-Easy Rocky Road Fudge

I did an ingredient search for semi-sweet chocolate b/c I had some in the pantry and was wanting a chocolate fix and this recipe came up. I tried it since I had all the ingredients and I am glad I did. I have never made fudge in the microwave and will never make it on the stove again. This was very good and super easy!!! Thank you!

Lasagna Roll-Ups

These were a little harder to roll up than I thought they would be and messier, but DELICIOUS!!! We always have so much left over from lasagna, so this is a great food saver. I just make one for the each of us (4 total). These would be great served to company! I have also made these with Italian sausage and spinach. just as versatile as regular lasagna. Thanks for a a great recipe, Virginia!

Mom's Chocolate Meringue Pie

No butter? I added a half stick butter, upped the sugar to 2 cups, added an additional egg yolk and one whole egg and used flour in place of cornstarch. I cooked it all over medium heat until it was thick and bubbly and then added the cocoa. Make sure your pie crusts are completely cool or that will result in a runny pie as well. I used 6 egg whites for the meringue and placed it under the broiler for a couple minutes with the oven door open so it wouldn't burn....you have to watch it VERY closely if you do this though. And make sure you "seal" the meringue on the edges or it will shrink. The pie set up nicely this way and was delicious.

Savory Diet Chicken

I did add some chicken broth to the pan and sprinkled everything with rosemary. The chicken was really tender, although I like my veggies a little more "squishy". I strained the juices from the pan after cooking and made a gravy as well.

Asian Lettuce Wraps

This is so good! I have used ground pork and turkey as well and all taste fabulous. We usually serve ours with cabbage leaves. It has a nicer crunch. Thanks for the recipe Rachel!

Balsamic-Glazed Salmon Fillets

This was very good. I used a really good quality balsamic vinegar (you could drink this stuff it is so good) and that may have made it better. All the flavors blended nicely. And you can marinate salmon for up to 8 hours safely. However, unlike meat, fish absorbs flavors faster and does not require as much time to marinate. So 30 to 60 minutes is ideal.

Western Omelet Sandwich

My Mom has been making these for over 35 years and we use to think they were a treat to have for dinner. We don't add parsley, but it is a nice addition. And since the recipe does not call for green onion or garlic, I think one reviewer mis-reviewed.

Smothered Pork Chops

Thank you for a pork chop recipe that does NOT include cream of mushroom soup!!! Family really enjoyed these chops and I loved the gravy! I salt and peppered the chops before browning them in vegetable oil (instead of cooking spray), removed them to oven safe dish, then sauteed the onions. I didn't have browning sauce (not really sure I know what it is) so I added flour to the oil and onions and cooked for a minute and then added the broth and water to make the gravy. I poured the gravy over the chops and baked covered about 1 hour in a 300 degree oven. I needed my stove top for other dishes or else I would have cooked them on the stove top. Tasty as it was, I would still like to find browning sauce and use it.

Chuck's Come On Ice Cream (or Night of the Red Death) Chili

My husband makes this chili...he always says "real chili doesn't have beans or ground beef in it!" I personally like the beans and beef. But this is a nice change from my normal chili (could be a little spicier though). Definitely like the rub for the meat...will use that elsewhere. Thanks for sharing!

Habanero Hellfire Chili

OMG! Heat? Check! Make sure you save some beer for cooling your taste buds (as well as the recipe). I like spicy stuff and this definitely kicked up the normal chili. Don't skimp on the peppers...if you don't like it hot, try another recipe. Heed the title!!!

Bodacious Brownies

My 3 YR old wanted to help make brownies and I didn't have the box kind so we found this recipe. So easy and delicious. I don't think we changed anything (unless he snuck something in the bowl without me knowing). We didn't add the walnuts and we frosted them with chocolate icing. Thanks!

Seared Scallops with Spicy Papaya Sauce

I used this recipe for the papaya sauce only as I do not like scallops. The sauce makes a lot, so we varied our dishes for it. Served over Tuna steaks (not bad), rolled in a tortilla with baked cod for a fish taco (pretty good) and ate as a dip with pita chips. I did refrigerate it for a couple hours to help the flavors blend, and it was better the next day. Doesn't keep long though.

Slow Cooked Wildfire Beans

Great with cornbread! I used Dark Red Kidney Beans (personal preference) and maple syrup and brown sugar in place of the molasses and added hot sauce to kick it up a little more. Almost like a meatless chili.

I bought the generic cereal and there wasn't a recipe on it, so as usual I knew I could rely on this site. They came out delicious and were gone before they cooled. P.S. It helps me to put butter on my hands and then push the treats in the pan...no sticking!

Bella's Rosemary Red Potatoes

Have also made these on the grill. I like to coat the potatoes with some bacon grease instead of the oil and butter...a little fattier alteration, but so fab! I love rosemary with potatoes...you can't go wrong.

World's Best Pasta Sauce!

I LOVE this sauce! I normally have whole canned tomatoes on hand that I just run through the blender and use for this recipe. 2 cans of tomato paste thicken it a little much, so I normally decrease it to one can. Very flavorful and freezes beautifully. Worth the time and effort. The house always smells heavenly when this is cooking. Thanks for a great recipe John!
