About this Cook
I am the mother of three very active boys and wife to my best friend. We recently moved back to our home town after my husband's Army career ended and there is no place like home! I have a demanding job and schedule, so cooking is a challenge. I love allrecipes for the wide variety of recipes and cooking methods.
My favorite things to cook
I LOVE pasta and bread. Bring on the CARBS!!! I know more about Italian cooking, so I tend to be more comfortable with those dishes. I also love fried foods and bar foods. If I know what it is suppose to look and taste like, then I can make it. If I never ate it before, then I won't make it.
My favorite family cooking traditions
On the first day of school my mom always made us chocolate chip cookies, every year until we graduated. I have started doing it for my kids as well, although sometimes they get the packaged stuff due to time and work. But I don't tell them.
My cooking triumphs
If my children choose my cooking over a McDonald's Happy Meal, then that is a triumph!
My cooking tragedies
Tragedies...I'm not really good at baking yet. I added baking soda to cupcakes once. I made some peanut brittle that ran off the pan and all over the oven floor. No major tragedies, but as soon as I hit one, I will put it here.

Lasagna Roll-Ups
These were a little harder to roll up than I thought they would be and messier, but DELICIOUS!!! We always have so much left over from lasagna, so this is a great food saver. I just make one for the each of us (4 total). These would be great served to company! I have also made these with Italian sausage and spinach. just as versatile as regular lasagna. Thanks for a a great recipe, Virginia!

Mom's Chocolate Meringue Pie
No butter? I added a half stick butter, upped the sugar to 2 cups, added an additional egg yolk and one whole egg and used flour in place of cornstarch. I cooked it all over medium heat until it was thick and bubbly and then added the cocoa. Make sure your pie crusts are completely cool or that will result in a runny pie as well. I used 6 egg whites for the meringue and placed it under the broiler for a couple minutes with the oven door open so it wouldn't burn....you have to watch it VERY closely if you do this though. And make sure you "seal" the meringue on the edges or it will shrink. The pie set up nicely this way and was delicious.

Savory Diet Chicken
I did add some chicken broth to the pan and sprinkled everything with rosemary. The chicken was really tender, although I like my veggies a little more "squishy". I strained the juices from the pan after cooking and made a gravy as well.
