Carrot Cake III
this cake was fabulous. i made it for easter and everyone loved it!! very moist and flavorful. i made it in two 8 inch round pans instead of the 9x13 and they came out perfectly. also, i left out the pecans in the icing and added a few dashes of cinnamon instead. also, fyi, 3 cups of carrots was about 4 grated. yum!
