Acapulco Chicken
Love this recipe! The only change I make is omitting the bell pepper (personal preference). It is a regular recipe for us as it is so quick and easy to make- a great weeknight meal. Would also be good using thin strips of beef instead of chicken.

Chicken With Mushrooms
Very tasty! Different way to cook chicken... I get so bored with traditional chicken recipes. May try with a little white wine next time, too. Only comment from the Peanut Gallery was that there wasn't enough sauce to go with the egg noodles.

Ann's Sister's Meatloaf Recipe
This was okay. Nothing spectacular to speak of. I would recommend using plain tomato sauce to top it off with. I tried diluting tomato paste and that was thick and goopy even with all the water I added. I also tried serving with a can of Meatloaf Sauce and it was not good at all; kind of tangy, actually.
