About this Cook
I am a busy mom of 2 girls. My husband is in the Army, and we are very proud of him! I LOVE to cook, and try new things! I love to travel, and try new foods from different regions! I have been cooking for over 20 years now, and am very comfortable in the kitchen. I think that's where we all tend to congregate anyway!
My favorite things to cook
My favorite things to cook are probably casseroles and roasts. I can experiment, yet not really worry about the end results! They usually freeze well, and are quick and easy for the most part. Which is good for a hectic lifestyle.
My favorite family cooking traditions
I would say that a favorite cooking tradition is that on everyone's birthday, they get to pick what they want served for dinner. No matter how hard or easy, I will make it, because it's thier special day!
My cooking triumphs
I would say that my best cooking triumph would be in what I didn't make at all! Well, here's the story.... I bake alot, which includes brownies, fudge, cakes, etc.... One day, I brought home a store bought pan of fudge from the bakery. (Short on time) My daughter, who was 4, had a piece, and almost immediately made a sour face. She ran over to me, and told me that MY fudge, (not this store kind) tasted "more better"!!! I nearly broke into tears! Out of the mouth of babes!
My cooking tragedies
I would say that one of my cooking tradgedies (over 20 years of cooking will bring a few...) was on my 30th birthday. I had decided to make cupcakes in ice cream cones, that the kids could decorate, in place of the cake. Anyway, I was hurried, and it was getting late, and so I quickly made the batter, and filled up the cones and threw them in the oven. (Yep...I said filled them up!!! Not 1/2, not 2/3, but all the way up!!) Needless to say, there was soon a horrible mess!!! My husband came home, and found me cleaning the oven on my birthday, along with our kids doing a song and dance about how mommy made a mess!! What a birthday!

Watermelon and Strawberry Lemonade
The kids LOVED this! I really enjoyed it also! I didn't have any lemons, and so I used 6 Tbsp of lemon juice concentrate. I think that I would either add more next time, or use real lemons. But I still loved it!

Lemon Pepper Dill Fish
Delicious! I definately cut back on the butter! But a great "quick" dish! Thank you!
