Honey Baked Chicken II

We only had chicken breasts, but they were very good! I always get nervous by the strong vinegar-y mustard smell, but the flavor is much more mild- very well balanced with the honey. My husband has since requested this meal twice.

Ratatouille

I loved it! It has a similar taste to the "No-cream pasta primavera" from this site, which I also love. My husband ate his serving but wasn't interested in leftovers. My 5 and 3 yr olds loved making it and gave it a try, but in the end, realized they were still vegetables. That's about what I expect out of a veggie recipe, honestly, so I'll probably still make it again!

Plenty of work to make, and LOTS of calories to work off, but this really is soooooo good. I followed the recipe and it was wonderful! Great for a special occasion.

Burmese Chicken Curry (Gaeng Gai Bama)

I know nothing of how "authentic" it is, but we really liked it! I used only a little more than 1 T of Thai Kitchen's red curry paste, brown sugar in place of the palm, and omitted the cilantro (for my cilantro-hating husband). We've made it four or five times now and really like it! Thanks!

No-Cream Pasta Primavera

I've been making this recipe for almost a year now and I love it. I add some diced chicken and increase the amount of the vinegar mixture. In the summer, when everything is in season, I make big batches of the veggies and lemon, vinegar, oil, seasonings and cheese and freeze them in quart size freezer bags. Then when it's cold outside I heat it up on the stove and add pasta. Sooo good.

Lemon Supreme Pie

My family always bought one (or four!) of these from Baker's Square for holidays! I am so glad I found this recipe. I decrease the sugar in the cream cheese layer to 1/2 c, and prick the crust and bake it in the usual way, but other than that, this recipe is perfect. Thanks!

these are delicious COOKIE-BARS. even after adding flax and chopped almonds, i cannot say these resemble granola bars. that said, they were easy to make and i seem to be making quite a dent in the pan... four stars it is!

Rhinelander Lentil Soup

i know this soup isn't low-fat, but i feel good about eating it! i added a bit of leftover ground beef (my husband is the carnivorous type), but other than that made as is, and we loved it. i recommend simmering for the full three hours- the lentils need it to make the soup nice and thick. besides it makes your house smell soooooo good.

Broccoli Cheese Soup V

i made this for company today- i was a little nervous trying a new recipe, but it was fabulous. only changes: added a bit of garlic powder to the onions, used half chopped broccoli, half florets, and added half a can of cream of celery at the end. we served with shredded sharp cheddar and everyone loved it. this was just as good as panera bread's soup!! thanks for a great recipe!

Annie's Fruit Salsa and Cinnamon Chips

just another echo... great recipe for the superbowl party. i did the tortillas like others, coating whole tortillas in a ziploc, stacking and cutting, no re-spraying. i also stuck them in my muffin tins for sbout seven minutes, then flipped them onto a baking sheet for another three or four minutes. they're just like low fat churros! i also left the sugar out of the salsa, but i did use frozen raspberries and a handful of frozen blueberries. this recipe is brilliant!

Almond Biscotti

we really liked these. i followed the recipe as written. we've been making hot chocolate every day... the nice thing is you don't really have to worry about them getting stale quickly like other cookies! i think these might be a nice addition to my christmas gifts with some hot chocolate mix!

Honeyed Pork Chops

ok, maybe i'm being one of those annoying people that rates a recipe and says they changed everything about it... BUT, my husband wanted to grill some nice, thick pork chops tonight, so i made this sauce without the water and added about a teaspoon of hoisin sauce, and they were FANTASTIC! we just kept mopping the sauce on them every few minutes and they were SO tender, and the honey was so great all carmelized on the chops... mmm. thanks for a great sauce recipe!

Gooey Butter Cookies

this is the only cookie i've ever made that i don't want warm from the oven. there is some strange phenomenon that causes these cookies to taste MUCH MUCH better the day AFTER you bake them. i made them a second time to see if it was just in my head, and my husband agrees with me. the texture is a little denser and moister... but maybe that's only because i live in indiana and it's so incredibly humid all summer long... anyway, if you make these and aren't too crazy about them, don't give up right away. i also added a few chocolate chips this time, because, hey, what isn't better with chocolate? thanks, kim!

Chicken and Dumplings I

sorry, these dumplings did not work for me at all. i added about a cup and a half of extra flour and they were still too sticky to roll out. i finally tore off a few pieces and threw it in my boiling soup, but they were still very soggy.

Grandma's Gingersnap Cookies

my family never made gingersnaps, so when my husband requested them this year, i wasn't sure about it, but i love these cookies! i was scared of how strong the batter smelled because of all of the molasses, but cookies have a milder taste, which i love. i used butter in place of shortening and added a dash of nutmeg. thanks for a great christmas recipe!

Chicago Style Stuffed Pizza

i love giordano's pizza, so i was excited to try the stuffed pizza at home. i used a 9-in round cake pan, since others said they had success with that, but i was disappointed with the crust. it was even thicker than chicago-style, and sort of hard to chew. i'm not an expert at breads, so it may have been my fault, but i will try the stuffed pizza with another dough recipe next time. i loved the filling- how can you go wrong with cheese, sausage, pepperoni, garlic, and onions?

Cauliflower-Cheese Soup

this was perfect for a cold day! i substituted 1c chicken broth for the water, added 2 cloves of garlic, and threw in some broccoli rather than celery, per my husband's request. i also used a little over 1 c of sharp cheddar. towards the end i used a potato masher on the whole mixture, which helped break down the potatoes and give smaller chunks of the other veggies. this got my 18 mo old AND my husband to eat all of their vegetables. that's how i define success in my house! i will be making this regularly.
