This recipe ROCKS! I kept thinking as I was browning little pieces of meat, that this had better be worth it!! Then I was also thinking that I'd add cumin & garlic towards the end of cooking... but it smelled and looked soooo good that I didn't want to risk ruining it (and I add cumin to EVERYTHING) I just made it as is and I will never make it any other way. My husband LOVED this! Thanks so much for an awesome recipe!!!

Mustard Crusted Tilapia
This was really good. Everyone liked it. I used Italian Panko Bread Crumbs instead of fine bread crumbs for more texture.

Chicken Enchiladas V
Lightened this up and LOVED it! As others suggested, I used taco seasoning instead of chili powder and I added green enchilada sauce to the sour cream & soup. How I lightened it up! I used extra lean turkey breast instead of chicken... fat free cream of chicken soup, light sour cream, reduced fat shredded Mexican cheese and carb balance flour tortillas. Think it came in under par with all those light changes? No way!! Full fabulous flavor... half the calories, fat and carbs! Enjoy!!
