D's Famous Salsa
This recipe was so quick! I needed some salsa for my husband's lunch (he loves salsa on his salads). I used 2 cans of Rotel, about 3 or 4 T of green onion, 2 big garlic cloves, 2t of lime juice from a bottle, and about 1T of dried cilantro. Since I used Rotel, I omitted the green chiles. I'm sure it would have been better with the fresh, but with 10 min. to make salsa, I pretty much subbed everything. I loved that it was so quick and easy, and tasty too. The Rotel gave it a nice kick. Thank you so much for the idea!

Black Pepper Goat Curry
This recipe was really delicious. My husband orders goat curry when we eat out, and he thought it tasted as good as the restaurant. I omitted the cayenne pepper - it was plenty spicy with the peppercorns. One of my three kids liked it, but the other two thought it was too spicy. Next time, I will decrease the peppercorns by 1/2 to suit their tastebuds. I also used 1 Tbsp curry powder instead of the leaves. It was really delicious.
