We enjoy these pancakes....made them twice and they came out great both times. Yah, double the sugar makes it right!

There was only 2 pieces left at the end of the night. I didn't have all the spices either and it came out superb!

Pizza Pinwheels

Reviewed: Mar. 23, 2004
These were good but they are messy and clumsy to make. The prep deserves 4 stars, but the taste deserves 5. After trying the first time, I ended up just using mini muffin pans sprayed with olive oil non-stick spray. I put pieces of the dough into each of the holes and then followed with the sauce and cheese. Instead of "pizza pinwheels" I ended up having "pizza bites"!

Cracker Jack Cookies I

Reviewed: Mar. 23, 2004
Try this cookie with macadamia nuts! Make sure you cook the cookies for the 12 min. until they are dark golden brown (if you want crispiness) - which to me tastes better than chewy!

Grandma's Slow Cooker Vegetarian Chili

Reviewed: Jan. 8, 2004
This is pretty good. I added a chopped fresh tomato, some cumin, chipotle chili pepper, but it still needed something...a little more salty maybe? Maybe my tatebuds are too bored. Good dish to make if you're trying to eat healthy; you can freeze leftovers in small quantities for future use. I just ate some defrosted leftovers tonite and it actually tastes better than the day I made it.

Kalua Pig in a Slow Cooker

Reviewed: Jan. 7, 2004
I have to admit this was pretty good but nothing can beat the real thing. Since my family raises pigs, we often make our own imu for luau but I just got a slow cooker for Christmas and really wanted to try this out. The smell while it was cooking was sooo good. It is SUPER EASY. I wrapped the pork in washed & de-ribbed ti leaves and used kiawe (mesquite) liquid smoke to try to mimic the authentic kalua/imu flavor. It was really good, but the real thing is still the best! But for those far away or wanting just a little (and not the whole pig) this recipe will satisfy the craving!!

Penne with Spicy Vodka Tomato Cream Sauce

This is awesome... here is the low down on what I changed as per other people's reviews: 3/4 c. whipping cream, 1/2 c. vodka, added chopped red & yellow bell pepper, used double the amount of sausage and added sliced chicken breast. My husband and his 2 friends ate almost the whole pan....if you want to impress...make this dish - mahalo Star!!

Mock Tuna Salad

Reviewed: May 30, 2003
WOW! This is REALLY GOOD! I could truly give up tuna and egg salad for this. The only things that I changed was: I used Nayonaise in place of mayo, sweet round onion in place of green onion, added celery and paprika. This really is ono - broke da mouth!!!!!

Scallop Scampi

Reviewed: May 24, 2003
I think the whole can of chicken broth is too much. Next time I would use maybe 1/2 can. I ended up thickening it. But besides that, my guy and his friends really thought it was "ono" (delicious)!!! They ate the whole pot.

Beer Cake I

Reviewed: May 13, 2003
This cake is a winner!! I made it on Mother's Day and everybody loved it. I used an English imported beer called Newcastle Brown Ale. It was great in the cake and I enjoyed drinking the other bottles too! I used a cream cheese frosting I found on this website too. I am going to buy another fancier bundt cake pan just for this recipe. Thanks Val for sharing this - you're a sweetheart!!!

Ninety Minute Cinnamon Rolls

Reviewed: Apr. 30, 2003
They were good. I used the cream cheese idea from another recipe. My only complaint is that the sugar from these dripped off the muffin pan and burned onto my oven. The smoke filled my kitchen with that awful burnt smell and now I have to deal with getting the burnt stuff off of my oven floor....not real happy about that. If you are going to try this for the first time, think about putting these rolls into a 9 x 13 pan to save yourself the extra cleaning!

Roast Chicken with Rosemary

Reviewed: Apr. 30, 2003
Wow. This roast chicken was awesome! I slipped some butter and fresh rosemary under the skin especially around the breast and thighs. I rubbed olive oil over the chicken, squeezed one lemon over it and then used a little garlic salt and fresh ground pepper. I stuffed some fresh rosemary, a few cloves of smashed garlic, the quartered onion, the lemon halves and some sea salt in the cavity. Lastly I poured a can of chicken broth over the bird and popped her in the oven for about 2 hours while basting every so often. My husband and in-laws were very impressed and thought it was so moist, tasty and delicious. Definately making this again!

Cheese Herb Bread

This bread smelled soooo good but unfortunately it FLOPPED - literally! It looked pathetic when it was done. I think it was way too much yeast/not enough water. But I will try it again.....

Portuguese Sweet Bread I

Reviewed: Apr. 29, 2003
Maybe its the humid conditions here, but even on the light crust setting the crust of this bread comes out a little too hard/dark. Other than that, it is really wonderful straight out of the maker with a little butter and guava jelly!!!

Eggplant Parmesan II

Reviewed: Apr. 29, 2003
This was very good. I sweated the eggplant but I think I sliced my eggplant too thin. Slicing the eggplant 1/4-inch to 1/2-inch might work better. The quality of flavors was mouth watering. If my eggplant would have been thicker, this would have definately been all-star restaurant quality!

This is a really tasty dish! I also added summer squash (yellow zucchini), round onion, and red bell pepper. I doubled the sauce and served it with jasmine rice. My husband and I both agree that this one's a keeper!!!!
