Ham and Broccoli Strata
I loved the propensity of veggies in this dish, which lends it a chewy texture. The spices are just right for a flavorful breakfast dish. Because I didn't have all the ingredients on hand, I subsituted cream cheese with two packages of different Boursin flavors: salsa/chipotle and garlic/onion. I also had only 2 cups of cheddar cheese, so it was consequenty a little lighter. (not a bad thing.) The other change I made was to layer first the bread, then the veggies, ending with a layer of bread on the top, pouring the egg mixture over it.

Grilled Beets in Rosemary Vinegar
The beets were OK, but a little dry. Also, I questioned putting the marinade and the beets in aluminum foil. I've always heard that vinegar and aluminum interact negatively. I also questioned whether the beets should have been marinated AFTER the grilling. The raw beets were hard to handle, and I wonder if the flavor wouldn't have been more intense with marinating after the cooking.
